hey winnie, nah, not really embarrassed, but I think its good to post what happens some nights... I know sometimes people dont want to post what they are having, as everyone elses sounds so yummy or has 'wow' factor... . So it was just ordinary old 'get fed and get fed quick' last night... lol. I'm not a perfect domestic goddess, but my kids love me and they are healthy (apart from the latest lurgy) and thats about all that matters to me so, fish and chips sometimes is YUM for them... . . lol.

Its great to see everyone having lots of different dishes and there's a couple I might venture to try... . .

Tonight will involve something with Rice, cos Mr got the last of the spuddies yesterday and Im not hitting the stoopidmarket till tomorrow.

fisher - I would send him out fishing any day of the week... but ... we are flat out lambing at the moment and he won't be leaving the farm for anything anytime soon unfortunately! ! ! (actually I couldn't send him fishing, he has to wait to be invited by friends cos we don't have a boat! ) :(

Tonight? Goodness knows LOL will be at Welly airport at 3pm, then an hours drive over the hill - might be scrambled eggs or sommething equally exciting!

i poached half a chicken and added some asian flavours took the meat off the bones, added spring onions, carrots, cabbage, rice noodles, broccoli and brussel sprouts, will be tasty! !

Is no-one cooking? ? ? Well, we know Mr charlieb is being spoiled with roast lamb because it's his birthday - but what about everyone else?

I haven't got a clue what I want ... go on ... inspire me :)

I am stumped tonight have to do kids sports drop offs, then head to supermarket, may pick up a chicken to roast, and will prob throw in some roast veggies, might serve some creamed spinach along side. But who knows by the time I battle the supermarket!

Hmmm. . well... my "the secret" visualisation of lamb being on special didnt work. . lol

So, mr charlieb's birthday dinner is Roast chicken, kumara and potato with brussel sprouts and leeks... . and gravy! Of course!

No, dessert, cos I just havent had time... although, if he behaves he might get a piece of peppermint choccie!

Oh well charlieb ... we'll just have to get together & practise our 'positive projection' ... . I'm sure the chook will be just as well recieved!

OHHH Indy one my my favourite ways... apart from spatching. . hope you like it... Its my goto roast chicken. .
Cold roast beef slices with lettuce, tomato, red onion Red capsicum. . some fine sliced fresh parsley and spring onions and horseradish sauce... All layed in a french stick with lashings of butter . . then slice off pieces as you want ... nice easy simple dinner...

I'm going to try to make "Pancit" which is like a filipino chop suey! Should be interesting, lol... . a workmate gave me the recipe.

steak and eggs - last nite steak eggs and oinons, nite b4 steak, eggs onions, mushrooms and tomatoes - Im getting pretty sick of steak - just I cant be bothered cooking something else. Steak is always easiest. Yesterday we had a big lunch - lots of smaller Thai dishes in the city. I promised my love I'll make him a korma tomorrow after work.

Dinner tonight was nice and easy... fried farm sausages, potato wedges, fried eggs, sweetcorn and brocolli. I've got a roast chicken out to defrost for dinner tomorrow night.

We had sheeps kidneys in an onion and garlic gravy with mashed Kumara/pumkin/carrot mash and steamed brocolli. I will do some apple blackcurrant pastries shortly.

Mine turned into spaghetti with a bacon, onion, garlic, mushroom, wh-
ite wine & cream sauce ... (cleaned out the fridge lol) with some peppers, sprouts, tomato, celery & cucumber to make a 'salad' on the side.

Well, it was YUMMO - IMO anyway, lol!
Here's the recipe as I made it... .

PANCIT
250g vermicelli noodles (or dried egg noodles)
250g chicken (I used thigh meat, chopped), and/or pork, and/or shrimps
1 large carrot, julienned
Bok choy, chopped (recipe said cabbage but I used bok choy)
celery, finely sliced (about 1-2 stalks)
1 onion, sliced
3 cloves garlic, crushed
1/4 c soy sauce
2c (I used a bit less) Chicken stock
salt & pepper to taste

Put vermicelli noodles in a large bowl, cover with boiling water and leave to soften.

Heat some oil in big pan or wok (I used peanut oil), saute the veges enough to half cook them. Season with a little salt. Set aside.

Add some more oil to pan, saute the garlic and onion. Add in the meat/s and stir fry for a few mins till the chicken changes colour. Season with salt, pepper, and a dash of soy sauce. Set aside.

Time to build the 'pancit'. .
Boil the stock and soy sauce in the pan. Add in the (drained) blanched noodles (you can cut them with scissors to make them more manageable at this stage... . my filipino friend does this).
Let simmer till the noodles absorb the liquid.

Add in the meat, and mix.
Add the veges last. . mix and let heat through.
Serve with a wedge of lemon to squeeze the juice over.
