Pan-fried steak,

Added butter & cream & cracked pepper to the pan juices to make a sauce,

+ large salad with cos lettuce, julienned carrot, tomato, cheese, coriander & lime juice.

Roast "baby" Chook with rosemary butter. . sage and onion gravy. . roasty herbed spuds. kumura. carrots. parsnip. pumpkin. and roast broccoli. . . . maybe some silverbeet... Haven't decided if I want to go out in the cold wind to get some lol:}
All makes great leftovers for Sat brunch. .

HOT SMOKED SALMON AND ORZO SALAD

1 cup orzo, cooked according to packet instructions
1 teaspoon flaky sea salt
½ cup fresh or frozen peas, cooked
1 tablespoon fresh chopped dill
Grated rind 1 lemon
¼ cup chopped flat-leaf parsley
2-3 tablespoons extra virgin olive oil
2 tablespoons lemon juice
2 cups baby spinach leaves
200g hot-smoked salmon, broken into chunks

Place the orzo in a bowl and add the salt and freshly ground black pepper to taste. Fold through the peas, dill, lemon rind and parsley. Drizzle in the olive oil and lemon juice and gently toss everything together. Add the spinach and salmon and fold them through. Serve in bowls. You can also make it go further by adding wedges of hard boiled egg if you wish.

You only need to cook the orzo for a few minutes I add a little olive oil to the water, along with a pinch of salt. I taste with the teaspoon as it is cooking to get the right texture. You want it firmish, but that your teeth will go through it as opposed to mushy.

I drain and rinse under hot water - just to keep it hot, although you eat this warm or cold.

Sproutman do bags of baby spinach leaves, about the size of a twenty cent piece and they are much nicer than having to chop larger leaves.

Chicken Maryland ala Pak'n'Save... (reduced to $4. 70 - so will find out soon if its nom nom) served with hubbies famous wedges and coleslaw... . Also bubbling on the stove is a bacon hock soup (also reduced a huge one for $3. 80 so brought 3 and popped the other 2 in the freezer)... nom nom nom... so dinner tommorrow sorted as well. Then tommorrow I am going to make Fishers Glazed meatballs as I have some pork mince in the freezer just starting to look a little freezer burned and the oldest thing in there... so better cook it up... and that Monday night sorted... Phew I am on a roll. Miss 16 has production all week so dinners are going to be erratic and only for 3... . .

For dinner here ... not much. Husband wants baked pork chops (put lots of onion rings on top of chops, pepper/salt/skirt of soy/sprinkle of sugar and some minced garlic) and hot chips with aioli ... talk about easy~!

Fishers Glazed Meatballs

500g Pork Mince, 1 onion, 1/2 tsp ginger, 1 Tbs Soy Sauce, 1 Egg, 1/2 Cup breadcrumbs. Roll in flour, cook in oil.

Add following glaze once meatballs are cooked. Glaze: 2 Tbs Brown Sugar, 2 Tbs Soy Sauce, 1 Tbs Tomato Sauce, 1 Tbs water mix all ingredients together.

(I usually double or triple the glaze as we like more "gravy" on the rice eg 1/4 cup brown sugar, 1/4 cup Soy sauce, 1/8 Cup Tomato Sauce and 1/8 cup of water)

tonight we are having a beef/pepper pot roast thingy in the slow cooker. going to add soon some carrots and onions. maybe some potatoes too so its a one pot dinner.

KFC Family feast. Ohh the luxury of takeaways whenever one feels like it. I live 70 ks from the nearest town, so it isn't an option for me at all. I envy people who can pop on down to the corner dairy, or supermarket for items they forget, or for spur of the moment takeaways.

Dinner tonight here is comfort food. DH collided with a dog on the road on the way home from grandsons hockey today, so, comfort food is called for. Roasted minty lamb shanks with kumara and caramelised onion mash, baked pumpkin slices probably seasoned with ginger and brown sugar, and hmmm... too cold to go out the the garden for fresh greens, so prolly frozen beans. Dessert: Sponge topped fruit pudding.

yes jaybee but i bet those lamb shanks were home kill to die for taste and meltin ya mouth and healthy, unlike takeaways which are not good for you at all, i would suggest the only good takeaway food is fish and chips as its as close to unprocessed as you can get and its the processing thats bad for you.

Had ours for lunch since it was raining. Roast pork, kumera, pumpkin, corn, potatoes and gravy with apple sauce. apple crumble for dessert.

my husband's made a huge batch of beef chilli with kidney beans, to feed some visitors tonight, on top of nacho chips and topped with grated cheese and sour cream and guacomole and my salsa (finely chopped red onion, capsicum, cucumber, tomato, coriander, lime juice)

and red wine

i'll probably eat everything except the corn chips

I've got a chicken casserole in the oven ... I had one chicken breast in the fridge that needed using so I chopped it up with an onion, some celery & a few cloves of garlic.
Into the casserole dish this went along with a tin of creamed corn, some cream, s&p & thyme.
After an hour at 180C I'll stir in a couple of cups of froz veg & some shredded silver beet from the garden. Another 30 minutes or so and it'll be done. I'm having a mixed mash of spuds, kumara, swede & garlic on the side. Mmmmm! ! !
