Corned beef with garlic potatoes and whatever veges there are in the fridge - oh and mustard sauce :)

Take large strip of tin foil. . place on few chunks of butter, one for each fillet of snapper. . pinch of salt top and bottom on the fish and lay it on top of the butter. . grind of pepper and rock salt and a good squeeze of lemon juice. . slide under and on top a few dill sprigs. . thyme sprigs. . and pop on some slices of tomato and some parsley sprigs on top. . thin slices of banana capsicum and lemon slices finish the parcel. .
Wrap up, centre of the oven at 190c for 14 mins each side as the snapper fillets are quite thick... steamed fresh pak choy from the garden, steamed slices of pumpkin make up this scrummy low carb meal. .

fisher, is there such a thing as 'banana capsicum' or are you using both banana and capsicum? (there must be a banana capsicum - you wouldn't put sliced banana on snapper surely? ? ? lol)

well it was a bit rough to be honest fisher, not my usual following of a recipe to the T! ! I softened a finely chopped onion in a couple of 'slices' of butter for about 15 mins, added two sachets of chicken soup mix but that didn't soak up all the butter, so I also added some plain flour until I had a roux looking mixture. Slowly added enough milk to make a sauce, a tbsp hot English mustard (was thinking about Jamie Oliver's fish pie recipe but didn't get the book off the shelf! ), plus the remainder of a bag of frozen peas and 4 quartered hard boiled eggs and the smoked fish. Poured this mixture into a glass ovenproof dish and topped with mashed potatoes. Grated cheese on top and am now waiting for it to brown and eat! I asked hubby if he wanted baked beans with it (as per Jamie's advice) but he has declined! 12 yr old son won't even try it and has made himself tortillas for dinner and has even had a slice of blackberry and apple pie for pud! ! How was your snapper?

Well... I'm almost embarrassed to post, but will... to prove we dont all live a perfect life all of the time. . lol... .

Very busy day, with a Master 11=climber finishing at 6. 30! So kids are munching on good old F&C picked up on the way home... . Mr's having a sausie casserole and spuddies and I'm having a quick pasta!

Tomorrow, I will try to be better, lol

lizab. . fresh snapper is great anyway you do it... Was good thanks... Never used thyme in the mix before and really, it didn't make a lot of difference so will leave it out next time...
Pie sounds pretty good. . did you use canned or real stuff broken up and boned. . :? ? have you tried a little paprika on top of the cheese before going into the oven...
Never had beans with fish pie before :} at least ya young fella can make his own tortillas. . never go without pud eh... typical kids... we were all the same. .

tonight is was (for some reason? ) extremely mild beef chili on rice. Don't know how that happend as I thought I threw in heaps of hot suace!

I was going to cook beef stroganoff, but... Came home to a messy kitchen, kids had been making afterschool snacks, and of course it didnt occur to clean up. The cat had chucked over the kitchen floor, I got told "one didnt like the mushrooms, one didnt want onion, another didnt want smashed potato, they wanted it baked, another said it tasts like sick". Noone had had gotten rid of the rubbish bag I left in the kitchen this morning to be placed at the gate, so the dog had eaten through the side and manky old food was spilt over the floor. So I thought stuff you, had a hissy fit and went out for meal and a drink with a girlfriend and left them to fend for themselves. Their Father made them steak sammies and fries.

Well, for us, we went to a local restaurant just down the road from where we are staying called "Lau's Family Kitchen"- they appparently have one in Lygon Street which is so popular, they had to open a second one. Menu was: vegetarian wontons in a clear broth with snow peas, bamboo shoots etc, prawn and scallop dim sims and salt & pepper squid - we shared these and then shared a main of Queensland sweet chilli prawns. I must say, it was delicious and not too much, we shared the plates which was more than enough.
Gale force winds and heavy rain forecast for Victoriatomorrow, so cannot say I am looking forward to the take-off LOL.

As for dinner tonight - I have some prawns in the freezer & mung bean sprouts in the fridge, so it's going to be Pad Thai for me ...

fisher - it was real kawahai hubby caught and smoked a couple of months ago and I froze. It was really good! I'll try the paprika on top next time (although that was the last of the fish in the freezer, so not sure when we'll get anymore)
