I also love this recipe and make it often and have done for quite a while now. I now don't bother with the wet mixture and trying to make scones with it but just spoon it into muffin pans heaped up well adding onion, cheese, sundried tomato and parsley or whatever is around. I then freeze them and Hubby has one for morning tea most days. A real favourite.

Hey I like that idea.Dumb question, do you just add the onions, cheese etc into the muffin tin or stir into the scone mix!And do you use raisins or dates as well!

. When I lived in Aussie I ued to go to a cafe and the scones there always won heaps of awards, they were amazing. her secret wa keeping the flour in the freezer to keep it cool

Bumping again.Scones were excellent.Trouble is they never last long!

Even turned it into a flat bread.Just omitted the egg & baked a thick slab of flat bread to eat w/ soup instead.Perfect!

@182 that was my Ma's secret too. all the ingreds cold . to which she added slighty warmed milk mixed in with a knife.then into a hot oven.voila.award winning scones

I recently made these as date scones. Soaked some dates in some of the milk then added to the mixture with the rest of the milk also added about 1 tsp of cinnamon to the dry ingreds. I soaked the dates overnight as I was making the scones early next morning but maybe a couple of hours may be long enough.

OMG these are the easiest, nicest scones I have ever made or eaten!FANTASTIC!Can't wait to try some of the variations - the cinnaomon pinwheels and pizza scones are definite candidates!

Potato Scones 2 cups sifted Flour,1 Cup Mashed Potato,1 tsp salt,1 tbsp Sugar,3 tsp B.powder and 1 1/4 cups of Flour and 1 tsp butter .Sift dry ingredients,rub in Butter and add Milk.Mix with a knife and pat out on a board and cut and bake at 200 degrees. for about 10-15 minutes untill light brown.They are still nice and fresh next day.

Found this recipe on Sunday and gave them a try.FANTASTIC.In all my 70+ years, I have never been able to make a half decent scone and gave up trying years ago.These came out just wonderfully .Light, fluffy, good flavour and two days later they were still OK after 20 seconds in the microwave!

Thank you, thank you, thank you! I'm sitting here eating one of my first REAL scones I've ever cooked. In the past they have always been like rock cakes, flat and very unappealing no matter what recipe or variation I've used. I found I had to cook these longer than 10 mins though,more like a good 15 but we have a rather small wall oven and it doesn't pump the heat out very well. I did add grated cheese so not sure if that lengthens cooking time or not. These are amazing, light, fluffy scones! Wonderful for idiot cooks like me :-)

They're wonderful scones & if you omit the egg & just use milk/water/butter you can make a type of damper bread called takakau... Wonderful w/ lashings of real creamery NZ butter of course!

Very good thanks for recipe My scones always turned out small/hardish like American style, "biscuits".These are fluffy, high & soft like the devonshire style ones we used to get at the hospital cafeteria
