Does anyone have a recipe.Probably can't do scones in there.But cakes are good, and so muffins must ok too.I know they don't keep as long as oven baked, but microwave cooking can be so quick and easy.

Attaching a muffin recipe that I was given years ago as parent help at Kindy. Will admit it has been a few years since I made it so no guarantees here, but give it a go. It is important to remember that the muffins will keep cooking after you remove them from the microwave, so remove them from the microwave when they are slighly undercooked. Remeber different microwave power levels vary, so it may be trial and error with the timing.

Maggie's mufins: 1 egg 1/4 cup oil or melted butter 1 3/4 cups bran 1/2 cup sultanas 300ml milk 3/4 cup sugar 1 1/4 cups flour 1/2 tsp salt
Beat eggs and milk together. Mix in oil and butter Add all dry ingredients, mixing lightly and quickly. Keep mixture lumpy. Spoon into mufin cups and half fill. Cook on full power 2- 2 1/2mins. Note: batter is often better made and refrigerated 24hrs before use

I made some blackberry muffins yesterday and cooked the left over mixture in the microwave. I used a silicon muffin tray. Cooked perfectly.
