Possibly too late for this time... but I just use a standard measuring cup and have a slight mound on the top instead of flattening it....

Hope that makes sense!!???

I heaped a measured cup, slightly overcooked, and only had jam that was passed its use by date when Noah was still a simple boat builder ... YET ... she LOVED them and asked me to make sure I kept the recipe handy.
*giggle*
Oh, if only she knew how handy it was ... as long as the PC is turned on and TM MB is up and running.
Thanks to the originator and the holder and the repeater of this recipe. This male has scored kitchen brownie points for the weekend ... roll on the rugby.

Hi dying to give these a go cos they sounds yum and I am usually very useless at scones- however I do not have much milk, could I top up with water, or plain yoghurt? Thanks heaps in advance!

Well decided to just give it a go- cannot believe how forgiving this recipe is!

Had misjudged amount of flour so ended up having to use half a cup of rice flour to top it up, used a combo of egg, butter, soy milk, regular milk AND yoghurtas the liquid.

Not only that but I realised just before I put the mix on the sheet that I had forgotten the baking powder- so had to kind of stir that in very last minute- honestly I thought it would be a disaster but I have just eaten one and so has husband and they are surprisingly delish!

Yay this recipe!

BTW:replace the egg w/ extra milk/water, bake in one slab & you've got a kind of easy damper bread ;)

Chelsea Lemonade scones. Lemonade Scones

Ingredients

4 cups self-raising flour
300 ml cream (1 small bottle of cream)
¼ cup Chelsea White Sugar
1 can lemonade (355 ml) Sprite or 7UP etc
½ teaspoon salt


Method

Preheat oven to 220ºC. Cover an oven tray with a sheet of baking paper or spray well with non stick baking spray.

Mix all ingredients in a bowl to a smooth dough. Tip out onto a well floured bench and cut into squares or press out with a round cookie cutter. Place the scones, just touching each other, on the prepared baking tray. Bake for about 15 - 20 minutes until starting to colour pale golden. Check they are cooked through and cool on a wire rack, covered with a clean teatowel (this keeps the scones lovely and soft).

Cut in half and spread with jam or honey when cool enough to eat.

Post #6 jillbo. here it is again. Idiot proof Scones.
Here it is again for anyone. Melt 50gms butter in a microwave jug. Let cool a little and break 1 egg into it and top up with milk to = approx 1 3/4 cups liquid. Mix well with a fork. Add by mixing with a knife to 3 large cups self raising flour. Bake 230 for 10 mins. You can add a bit of sugar and fruit or cheese or whatever you feel like.

I can make scones okay - usually the Edmonds recipe but thought I would give these a try.Rolled lightly on a floured board and they turned out nice and fluffy, but I think they definitely needed salt, hubby (ex chef) thought so too, but a nice texture.Will try again with salt in them.
