Favourite frying pan?

I've just bought a lovely big s/s pan on sale (yay, Farmers!)... Anyone have any tips on how to use so it's really non-stick?I plan to use it for homemade Lamb burgers tonight... is it just a matter of leaving them to seal (on the hot oil) before moving them (like steak?).Just a bit worried, as I've literally never used anything but non stick tefal before.I actually "heard" Uli's voice in my head when I chose the pan, LOL!It's got a heavy base, fully encapsulated 'aluminium core'!Also, can I use s/s utensils, or still only the non stick type utensils??TIA.

Well... google and instinct were my friends... and it turns out my S/S pan is pretty much amazing, and not sticky at all!Heated till very hot, added the oil, and had great results.Deglazed at the end, to clean the pan... worked brilliantly!Thanks buzzy, you were my inspiration.
