Guar, xanthan, coconut flour. Use very small quantities and add gradually.

butter or cream can be used as a thickener. You can also pour out the liquid and reduce it till it thickens.

Egg yolk can be used as a thickener so can animal blood.
If you are using blood pour the liquid out of the stew and gradually whisk it into the blood then add the blood mixture back into the stew. This stops it curdling.

Cauliflower boiled till mashable. Rhubarb is good in a stew - it vanishes, and thickens the gravy.

Some health food shops have it. Huckleberry Farms in Auckland. Or you can get it by mail order from Nature Foods NZ.

Perhaps you are mistaking coconut flour for coconut powder. Coconut flour works very well as a thickener. Coconut powder is dried coconut milk and is completely different.
