Blueberry coconut slice

125g butter softened
2/3 c caster sugar
3 eggs separated
1 tsp vanilla ess
1/2 c sour cream
1and1/4cups flour
1 tsp baking powder
11/2 cups blueberries
2/3 cups caster sugar
1 cup coconut

Heat oven to 180c
Line slice tin (I used square long tin as slice tin too shallow)

Cream butter and first measure of sugar until creamy
Beat in egg yolks, vanilla and sour cream
Sifft flour and BP, stir into mixture then stir in blueberries.
Spread mixture into tin

Whisk egg whites until soft peaks form.
Add second lot of sugar and beat until stiff.
Fold in coconut then spread over the first mixture.

Bake 1 hour or until golden brown and a skewer inserted in centre comes out clean

Just in case you cant find it, here is another one:

Ingredients

*
Base
* 1 cup plain flour, sifted
* 1/2 cup brown sugar
* 1/2 cup desiccated coconut
* 125g butter, melted
*
Filling
* 400g can sweetened condensed milk
* 2 tablespoons golden syrup
* 60g butter, melted
*
Topping
* 60g copha, chopped
* 125g cooking chocolate, chopped

Preheat oven to 180°C. Line a 3cm deep, 28 x 18cm (base) lamington pan.


Combine all base ingredients in a bowl. Mix well. Press into prepared lamington pan. Bake for 15 to 20 minutes, or until light golden. Remove from oven. Cool.


Make filling: Combine all ingredients in a saucepan over medium heat. Cook, whisking, for 8 minutes or until golden. Pour over cooked base. Bake for 12 minutes or until firm. Cool completely. Refrigerate for 3 to 4 hours, or until set.


Make topping: Place copha and chocolate into a heat-proof bowl over a saucepan of simmering water. Stir until melted. Pour over caramel. Refrigerate to set. Cut into squares to serve.

Ginger Fudge Cake Melt 200g butter.add 1/2C brown sugar & 2t ground ginger.heat until sugar dissoves.Remove from heat.Add 1C mixed dried fruit.2 eggs.Mix in 1/4C crystallised ginger.1/2C rolled oats.1/2C coconut.1&3/4C crushed plain biscuits.Spread in lined swiss roll tin. Chill. Ice with Ginger Caramel Icing.Heat together 1T butter.2T boiling water.1/2C brown sugar.2t gr.ginger.till sugar dissolved.Stir in 2C icing sugar.
