ORANGE WEETBIX SQUARES 150 g butter, 1 cup crushed weetbix, 1 ½ cups self raising flour,
¾ cup sugar, ½ cup coconut, 2 tblspns orange juice.

Mix dry ingredients well.Melt butter, add orange juice.Add to dry ingredients .Press into tin.Bake 170c 15 mins.Ice with icing made with orange juice and icing sugar.

WALNUT SQUARES 100g butter, 2 tblspns chopped nuts, 1 cup flour,
2 tblspns condensed milk, 50g sugar, 1 teaspn baking powder,
vanilla.

Melt butter, sugar condensed milk and vanilla and add dry ingredients and mix well.Press into flat tin and bake at 170c.Ice with the following:
50g butter, 100g icing sugar, 1 tblspn condensed milk.

Bring to boil while stirring and pour over cake while hot.Cut into squares when cold.

FANZIE SQUARES 75g butter, 1 cup flour, 50g sugar,
1 teaspn baking powder, 1 egg, pinch salt,
jam.

Cream butter and sugar, add egg, then sifted dry ingredients and press into a shallow tin and spread with jam.

Topping:
50g butter, 50g sugar, 75g flour,
vanilla, 1 teaspn baking powder, 1 tblspn milk,
1 dsrtspn golden syrup, 1 cup mixed fruit and nuts, 1 egg,
2 tblspns coconut.

Mix together and spread on top of shortcake mixture and bake 170c for 30 mins.Ice with lemon icing.

DURKY DANDY 100g butter, ¾ cup sugar, 1 cup dates,
½ cup walnuts, 1 egg, 1 tblspn cocoa,
1 cup flour, vanilla, 1 teaspn baking powder.

Cream butter and sugar and add egg, dates, nuts and lastly dry ingredients and vanilla essence.Press into flat tin and cook at 170c x 20 mins.Ice when cold.

ma higgens cookies Just made these and they are flat as pancakes! I did wonder at the time about the recipe having no baking powder, just baking soda.How did other people's turn out!!

Speculaas 3/4 cup softened butter, preferably unsalted
2 cups brown sugar (spooned, not packed)
1 egg
1 cup ground almonds
2 teaspoons cinnamon
1/2 teaspoon each of salt, cloves, ginger, cardamon, and mace
2 teaspoons cocoa
grated rind of one lemon
3 cups flour
4-6 tablespoons milk
shaved or sliced almonds for undersides and milk for tops

Delicious Chocolate Slice... 250gm butter melted & cooled, 1c brown sugar, 2c plain flour, 1 tsp baking powder, 1 tsp vanilla, 2T cocoa, 1c coconut, 1 egg lightly beaten. Sift flour, coca & baking powder into a bowl. Add all other ingredients & mix well. Press mix into a lined slice tin. Bake @ 180°C for 20mins. Allow to cool and ice with a rich chocolate icing.This slice has a delicious soft texture and cuts really well.

Easy Coconut Biscuits... 1 heaped cup self raising flour, 1 cup coconut, 1 cup sugar, 1 egg, 125gm melted butter. Mix ingredients together and beat with electric beaters for 5 mins. Place spoonfuls on a lined tray. Bake @ 180°C for 12 mins.

Slice of Heaven
Sugar-free, dairy-free, gluten-free, guilt-free and delicious
Boil together in a saucepan for 10 minutes:
• 1 cup raisins
• 1 1/2 cups dates
• 2 cups water
In a large bowl:
• 3 cups grated carrots/apples
• 1 cup sunflower seeds
• 1 cup walnuts
• 1/2 cup pumpkin seeds
• 1/2 cups sesame seeds
• 1/2 cup coconut
• 1 1/2 cups rice flour
• 1 tsp cinnamon
• 1 tsp baking soda
• 1 tsp vanilla essence
• Pinch of salt
• boiled raisins and dates
Combine and press into a greased tin and sprinkle with poppy seeds. Bake at 150 degrees Celsius for approximately 30 minutes

Kingston Biscuits

200 grams butter
3 tablespoons honey
1 cup oats
1 cup flour
¾ cup coconut
¾ cup raw sugar

Filling
¼ cup cream
40 grams butter
200 grams cooking choc

Melt 200g butter with the honey, stir in oats, flour, coconut & raw sugar.
Roll into cherry sized balls & flatten onto a baking tray.
Bake for 10-15 minutes at 180C.
Allow to cool.

FILLING-
Bring cream to the boil, remove from the heat, add butter & chocolate and stir & mix until all is smooth.
Cool & spread onto biscuits, sandwiching 2 together.
