Bumping up for chocolate slice recipe

Belgian Biscuits 1 cup brown sugar-packed, 200gr butter, 1 lg egg, 1 tsp cinnamon, 2 tsp mixed spice, 2 tsp cream of tartar, 1 tsp baking soda, 2 cups flour. Cream butter & sugar until light &creamy. Add egg & spices mix well. add rest of dry ingredients. Mix well. Turn out onto floured board & form into 3 sausage shaped rolls. , about 5 cm in diameter. Chill in fridge or freezer until firm enough to cut into thin slices. Each roll should make approx 30. Bake 180*C for 10 mins. Fill with raspberry icing or raspberry jam

Ginger Crinkle Biscuits

2/3 cup oil, 1 cup sugar, 1 egg, 2 cups flour, 2 teasp baking soda, 2 teasp ground cinnamon, 1 teasp ground ginger, 1/4 cup treacle, extra 1/4 cup sugar.

Preheat oven to 180C. Beat together oil, sugar,egg & treacle. Stir in sifted flour baking soda and spices. Roll spoonfuls of mixture into balls and roll in extra sugar. Place onto greased baking tray and bake for 10-15 mins. These biscuits flatten and crinkle by themselves.

Note: - I made these yesterday and they are great, it is a recipe from Chelsea sugar.We found them a little too sweet for us so I will cut sugar next time, I also used 3 teasp gd ginger instead of 1 and added 1/4 cup chopped crystalised ginger with flour as we like them very gingery

Chocolate Raspberry Slice

2 cups (300g) plain flour
½ cup (50g) cocoa powder
1¾ cups (385g) firmly packed caster sugar
1½ cups (120g) desiccated coconut
2 eggs
200g butter, melted
½ cup (175g) raspberry jam

chocolate icing
1 cup (160g) icing sugar
2 tablespoons cocoa powder
10g butter, melted
2 tablespoons boiling water, approximately

METHOD

Preheat oven to 170°C (150°C fan-forced). Grease and line an 18cm x 28cm rectangular slice pan with baking paper, extending paper 2cm above edge of pan.

Sift flour and cocoa into a medium bowl. Stir in the sugar, coconut, then the eggs and butter, and mix well.

Spoon half the mixture over the base of the prepared pan and use your hands or a metal spatula to press firmly into an even layer. Spread evenly with jam.

Place teaspoonfuls of remaining mixture evenly over the jam layer. Use a fork or metal spatula to spread mixture into an even layer. Bake for about 60 minutes
or until just firm.

Chocolate icing
Sift the icing sugar and cocoa into a medium bowl. Add butter and water, and stir to a spreadable consistency.

Spread icing over hot slice; cool in pan before cutting into squares

I have to thank 245sam for post#39... made the 'caramel crumble slice' today for the first time, and its a hit in my household!Definitely a recipe for my forever recipe book.

125g Softened Butter
1 cup of White Sugar
1 Egg
1 1/2 cups of Flour
1 teaspoon of Baking Powder
Pinch of Salt
1 cup of cup

Method

Preheat oven to 180°C.
Cream butter and sugar until light and fluffy.
Add egg and beat well. Sift flour, baking powder, salt together.
Mix into creamed mixture.
Add sultanasand mix well.
Roll tablespoonfuls of mixture into balls.
Place on greased trays, flatten with a fork.

Bake at 180°C for 15 minutes, or until cooked.
Makes 20 biscuits.

Red Velvet Cupcake
• 2 1/2cups all purpose flour
• 2 cups sugar
• 1/2 cup baking cocoa (powdered)
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 1 teaspoon baking soda
• 250gms butter at room temperature
• 5 large eggs
• 1 cup buttermilk (see note at bottom)
• 1 teaspoon vanilla
• 1 teaspoon red food coloring
Combine flour, cocoa, baking powder, baking soda and salt in a mixing bowl.Sift dry ingredients three times.
Cream together butter and sugar until light and fluffy.Add eggs one at a time, making sure to beat well after each egg.
Add 1/4 of dry ingredients to creamed mixture then approximately 1/4 of buttermilk alternating until mixed well.Mix in vanilla and food coloring.

cont Fill lined cupcake pans 1/2 full of red velvet batter.Bake in a preheated 350 degree oven for approximately 20 minutes or until a toothpick inserted in the center comes out clean.
Cool cupcakes in pans for 5 to 10 minutes then remove from pans.Cool completely on wire racks before icing with cream cheese icing
NOTE:If you don't happen to have buttermilk on hand you can try this simple substitution.Place one tablespoon of lemon juice or white vinegar in an empty one cup measuring cup.Fill with milk to 1 cup.Let stand for 5 minutes then use in any cake recipe that calls for buttermilk.
