Louise Cake
(One does this one quite a bit and is always well liked, the base has a nice firm but softish bite. )

150g Butter softened not melted,
¼ cup sugar,
4 eggs size 7 separated,
2 ¼ cups plain flour,
2 teaspoons slightly heaped Baking Powder,
1/4 to 1/2 tsp vanilla essence
½ jar (about 225 to 250 grams) Jam raspberry or whatever
(prefer Black forest),
½ cup sugar extra,
2/3 cup coconut.
Using electric beaters cream butter & first measure of sugar until light and fluffy.
Beat in egg yolks only.
Sift flour and baking powder together.
Stir sifted ingredients and vanilla into creamed mixture (should be like a crumbling dry mixture).
Press mixture into a shallow baking tin that is lined with greased baking paper (also helps in lifting out slice upon cooled and cut).
Spread jam over this base mixture.
In a dry bowl with electric beaters, beat egg whites until stiff but not dry.
Mix in extra sugar and coconut.
Spread this over the jam.
Bake at 180c for 30 minutes.
Cut into squares while still slightly warm.
When cooled, lift out.

I've had a great time reading all these recipes when I have had lots of other things i should have been doing! !
A tip for making rolled out biscuits or shortbread. I hate cutting out bisc etc so now put all the mixture on to a piece of baking paper and roll it into a log about 2in thick. Put in fridge or if in a hurry put it in the freezer for about 20 mins. It slices very easily then and bisc all look a uniform shape

Just in case you cant find it, here is another one:

Ingredients

*
Base
* 1 cup plain flour, sifted
* 1/2 cup brown sugar
* 1/2 cup desiccated coconut
* 125g butter, melted
*
Filling
* 400g can sweetened condensed milk
* 2 tablespoons golden syrup
* 60g butter, melted
*
Topping
* 60g copha, chopped
* 125g cooking chocolate, chopped

Preheat oven to 180°C. Line a 3cm deep, 28 x 18cm (base) lamington pan.

Combine all base ingredients in a bowl. Mix well. Press into prepared lamington pan. Bake for 15 to 20 minutes, or until light golden. Remove from oven. Cool.

Make filling: Combine all ingredients in a saucepan over medium heat. Cook, whisking, for 8 minutes or until golden. Pour over cooked base. Bake for 12 minutes or until firm. Cool completely. Refrigerate for 3 to 4 hours, or until set.

Make topping: Place copha and chocolate into a heat-proof bowl over a saucepan of simmering water. Stir until melted. Pour over caramel. Refrigerate to set. Cut into squares to serve.
