# 4 Coffee & Walnut Slice

100g butter
1 teaspoon vanilla essence
4 tablespoons double espresso (or make a small quantity of very strong coffee in a plunger)
1 tablespoon golden syrup
1½ cups brown sugar
2 eggs, beaten
1 cup plain flour
1 teaspoon baking powder
1 cup coarsely chopped walnuts
50g melted butter
1½ cups icing sugar

Preheat the oven to 160C. Beat the butter, vanilla, 2 tablespoons of the coffee, the golden syrup and sugar together until smooth. Add the eggs and beat again. Fold in the flour with the baking powder and walnuts, then pour into a lined sponge roll tin and bake for 30-35 minutes.

To make the icing, beat the butter, icing sugar and remaining coffee together until creamy. Ice when the slice has cooled, sprinkling the top with additional chopped walnuts if desired. Chill before slicing. Makes around 24 pieces.

#5 COFFEE STREUSEL SLICE
BASE: 125g butter; 1/4 cup sugar; 1 cup plain flour; 1/4 cup self raising flour.
FILLING:400g can condensed milk; 30g butter; 2 tbsp golden syrup; 3 tsp instant coffee powder; 1/3 cup finely chopped walnuts.
TOPPING: 1 cup plain flour; 2 tsp cinnamon; 1/3 cup soft brown sugar, firmly packed; 125g butter.
BASE: Cream butter and sugar till just combined, stir in sifted flours in two lots, mix to a firm dough. Press evenly over base of well greased 30 x 25cm Swiss roll tin. Bake in moderate oven 10 mins. Spread with filling. Grate topping evenly over surface, bake in mod oven a further 10-15 mins or until topping is firm to touch. Stand 15 mins before cutting.

125g Softened Butter
1 cup of White Sugar
1 Egg
1 1/2 cups of Flour
1 teaspoon of Baking Powder
Pinch of Salt
1 cup of cup

Method

Preheat oven to 180°C.
Cream butter and sugar until light and fluffy.
Add egg and beat well. Sift flour, baking powder, salt together.
Mix into creamed mixture.
Add sultanasand mix well.
Roll tablespoonfuls of mixture into balls.
Place on greased trays, flatten with a fork.

Bake at 180°C for 15 minutes, or until cooked.
Makes 20 biscuits.

Red Velvet Cupcake
• 2 1/2cups all purpose flour
• 2 cups sugar
• 1/2 cup baking cocoa (powdered)
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 1 teaspoon baking soda
• 250gms butter at room temperature
• 5 large eggs
• 1 cup buttermilk (see note at bottom)
• 1 teaspoon vanilla
• 1 teaspoon red food coloring
Combine flour, cocoa, baking powder, baking soda and salt in a mixing bowl. Sift dry ingredients three times.
Cream together butter and sugar until light and fluffy. Add eggs one at a time, making sure to beat well after each egg.
Add 1/4 of dry ingredients to creamed mixture then approximately 1/4 of buttermilk alternating until mixed well. Mix in vanilla and food coloring.

cont Fill lined cupcake pans 1/2 full of red velvet batter. Bake in a preheated 350 degree oven for approximately 20 minutes or until a toothpick inserted in the center comes out clean.
Cool cupcakes in pans for 5 to 10 minutes then remove from pans. Cool completely on wire racks before icing with cream cheese icing
NOTE:If you don't happen to have buttermilk on hand you can try this simple substitution. Place one tablespoon of lemon juice or white vinegar in an empty one cup measuring cup. Fill with milk to 1 cup. Let stand for 5 minutes then use in any cake recipe that calls for buttermilk.

Magic Slice

1 1/2 cups plain sweet biscuits, crushed 75 g butter, melted 1 cup choc chips , 1 cup chopped raisins 1 cup desiccated coconut 1 cup flaked almonds 300 ml Sweetened Condensed Milk Makes: 24 squares Method Preheat oven to 180ºC. Grease and line 18cm x 28cm lamington pan. Combine biscuit crumbs and butter. Press mixture into pan. Sprinkle choc chips over crumb crust. Top with raisins, coconut and almonds. Pour Sweetened Condensed Milk evenly over top. Bake for 25-30 minutes until golden brown. Cool in pan, cut into squares to serve.

WHITE CHOCOLATE MACADAMIA NUT COOKIES

1 c. butter
1 c. brown sugar, packed
1/2 c. sugar
2 large eggs
2 t. vanilla
2 1/4 c. all purpose flour
1 t. baking soda
1/2 t. salt
12 oz. pkg. white chocolate chips
2 oz. . macadamia nuts, chopped

Preheat oven to 190cº.
In a l bowl cream togetherbutter and both sugars until light and fluffy. Beat in eggs and vanilla. Gently stir in flour, baking soda and salt, just until combined. Fold inwhite chocolate chips and macadamia nuts.
Drop cookies by rounded tablespoonfuls onto a non-stick cookie sheet) or lined with parchment paper) about 1” apart.
Bake for 9-12 minutes or until lightly golden.
Transfer cookies to a wire rack and cool completely.
The shorter cooking time produce ones like subway
