LOLLY CAKE. this is recipe out if pack you used to get at bin inn :)
Ingredients : 100gms butter, 250gms malt biscuit crumbs, 180gms fruit puffs/eskimos, 2/3 tim condensed milk, coconut for coating.RECIPIE; warm butter and condensed milk in microwave, add biscuits crumbs and lollies (cut into pieces) , mix. roll into log or small balls, roll in coconut and refridgerate to set :)

WHITE CHOCOLATE MACADAMIA NUT COOKIES

1 c. butter
1 c. brown sugar, packed
1/2 c. sugar
2 large eggs
2 t. vanilla
2 1/4 c. all purpose flour
1 t. baking soda
1/2 t. salt
12 oz. pkg. white chocolate chips
2 oz. macadamia nuts, chopped

Preheat oven to 190cº.
In a l bowl cream togetherbutter and both sugars until light and fluffy. Beat in eggs and vanilla. Gently stir in flour, baking soda and salt, just until combined. Fold inwhite chocolate chips and macadamia nuts.
Drop cookies by rounded tablespoonfuls onto a non-stick cookie sheet) or lined with parchment paper) about 1” apart.
Bake for 9-12 minutes or until lightly golden.
Transfer cookies to a wire rack and cool completely.
The shorter cooking time produce ones like subway

Connie's jalapeno brownies 100g butter, 150g (or so) chopped dark chocolate. 4 eggs, 1/2t salt, 2c sugar, 1t vanilla. 1-1/4c flour. 10 fresh jalapenos, deseeded & deveined & chopped fine (or bottled jalapenos, about 3-4T of chopped deseeded peppers) - NB you might prefer to wear rubber gloves while processing the peppers! 3/4c chopped nuts (I used peanuts, which were very nice).

jalapeno brownies cont'd Melt chocolate & butter together in microwave or top of double boiler. Beat eggs & salt in large bowl until foamy. Slowly beat in sugar & then vanilla, until all is well blended. With wooden spoon, stir in chocolate mixture until almost blended, then stir in flour until almost blended. Stir in jalapenos & chopped nuts. Pour into greased or papered 23x32cm tin & bake in preheated 175C oven for about 30 minutes. Top crust will be cracked & interior will look moist but not runny. Cool brownies completely before cutting. I made these uniced, but the recipe suggests icing them with a frosting made of 250g cream cheese, 60g butter, 1t vanilla, 4T milk or cream, 3T cocoa, 7 3c icing sugar.

whoops That frosting ingredients list should read "& 3c icing sugar" not "7 3c". They were surprisingly tasty brownies which didn't need icing. The heat of the peppers was present but pleasant, like chili chocolate.

Crisp Coconut Biscuits 125g butter;1 cup caster sugar;1 egg;2 cups s.r flour;pinch salt;1 cup coconut;extra caster sugar.
Cream butter & sugar,beat in egg,add sifted flour,salt & coconut. Roll into balls and press flat between palms of hands. Dip tod side in extra sugar. Place on greased trays,sugar side up;allow for spreading. Bake in mod hot oven 10-15 mins. Makes about 40

Grease a 19x29cm lamington pan Combine butter,cocoa and sugar in saucepan,stir constantly over heat without boiling till sugar has dissolved;transfer to lge bowl.Stir in egg,coconut,walnuts and biscuits. Press ,ixture evenly into tin. Refrigerate 30 mins or until firm.Melt half the chocolate over hot water;remove from heat,stir in marshmallows and almonds.Spread over base;sprinkle with cherries.Melt remaining choc and drizzle over cherries.Refrigerate till set before cutting.

Slice in cafe yesterday had biscuit type base, then raspberry jam then a white layer, cream cheese maybe! then a coffee icing with shaved chocolate on it--any ideas!

Magic Chocolate Slice 250g pkt digestive biscuits, 1/4 c coconut, 3/4 c toasted muesli, 1/2 c raw sugar, 3 tblsps cocoa, 125gr melted butter, 1 egg beaten. FILLING: 60gr butter, 1 1/2 c icing sugar, 2 tblsps custard powder, 2 tblsps boiling water. Preheat oven to 170. Line a 17x27 slice tin with non stick baking paper, with overhang on sides. Process biscuits to crumb. Add coconut, muesli, raw sugar and cocoa, process to combine. Add egg and butter mix well. Press into tin, bake 10 mins remove and cool. Prepare filling, place butter, icing sugar and custard in a bowl, beat with mixer adding boiling water gradually until blended, pale and fluffy. Spread over base and leave an hour to set. Make topping Place 200gr dark chocolate melts and 65gr vegetable shortening in a bowl over a saucepan of simmering water or microwave to melt. Stir until smooth, Pour over custard filling to cover and leave to set. Cut into squares. I made this today custard can do with extra vanilla flavouring, really nice. From this weeks NZ W/W.

Boysenberry and Sear Shortcake 1 1/4 flour, 1 1/2 BP, 1/2 cup semolina,1/2 cup caster sugar,175g butter, 1 egg beaten, 2Tbsp cpld water or milk, 1/2 cup boysenberry jam, 410g can pear quarters in clear fruit juice.
Rub together flour baking powder,semolina,suger and butter untill it resembles crumbs.
Cut in beaten egg and water or milk and mix untill the mixture forms small moist balls of dough.Take 2/3 of the mixture,lightly knead and press out to fit a 20 x 30cm slice tin.
Spread with jam arrange sliced pears over jam and scatter with remaining crumbled dough.
Cook at 180 for 25-30mins
Also yummy as a dessert with vanilla ice cream

Easiest biscuits ever! Peanutbutter & Chocolatechip Biscuits. 1cup peanutbutter, 3/4cup castor sugar, 1 egg-beaten, 3/4cup chocolate chips.Beat peanutbutter & sugar together in a bowl.Mix in the beaten egg.Stir in the choc chips - the mixture will be quite stiff.Roll into balls & place on an oventray lined with baking paper.Flatten with a fork.Bake in a preheated oven 180C for about 15min or until golden.That's it & no - there's no flour in this recipe.Yummy!

Choc fudge slice (no cooking) 250gr butter, 250gr sugar, 2 TBSP cocoa, 1 tsp vanilla essence, 2 packets round wine biscuits (crushed), 1 C chopped walnuts sultanas apricots (whatever you want in it, i use all three), 2 beaten eggs.
Melt first 4 ingredients, add remaining ingredients in order given. Press into greased slice tin & refridgerate until cold. Cut & enjoy!

Choc rough cake. decadent! 125gr butter, half Cup sugar, 2 TBSP golden syrup, 1 C flour, 1 tsp Baking powder, 3/4 C coconut, 2 TBSP cocoa. Cream Butter & Sugar, add G syrup then dry ingredients. Press into slice tin & bake 10-15 mins @ 180.
Topping. 1/2 C milk, 65gr butter, 2 TBSP cocoa, 12oz icing sugar, 6 oz coconut.Bring to boil milk & butter, add dry ingredients then spread on base. realy rich & very yummy!

Shortbread. 250gm butter, 2T rice flour, 1/3c icing sugar, 2c plain flour. Chop up butter and place in food processor with other ingredients. Process until mix comes together. Press mix into lamington tin 28x18cm. Mark into squares or rectangles and prick with a fork. Bake at 160°C for 35-40mins. Cut again and stand 10mins before lifting out to cool.

Melt N Mix shortbread. 250gm butter, 1/3c icing sugar, 1/3c cornflour, 1/4c sugar, 1/2tsp vanilla, 2 1/3c plain flour. Melt butter over low heat allow to cool slightly. Sift icing sugar & cornflour into bowl. Add sugar. Add butter & vanilla, beat till thick & creamy. Add sifted flour, mix well. Press into lamington tin, smooth top with spatula, mark into squares or fingers with knife. Prick with a fork and bake at 180°C for 30mins until golden. Cut into fingers or squares while warm and cool in tin.
