Yum Balls 1 1/2C sugar, 1/2C milk 1 tsp Vanilla 1/2C butter.Boil in a large pot 3mins then add;
3C rolled oats 1/2C cocoa, 1Coconut,chopped nuts and dried fruit(in total)
Chill, roll into balls and roll in coconut

Red velvet cupcakes please! My children tried these in a cafe a while back and absolutely loved them. Does anyone have a recipe for these please! Many thanks.

cont Fill lined cupcake pans 1/2 full of red velvet batter.Bake in a preheated 350 degree oven for approximately 20 minutes or until a toothpick inserted in the center comes out clean.
Cool cupcakes in pans for 5 to 10 minutes then remove from pans.Cool completely on wire racks before icing with cream cheese icing
NOTE:If you don't happen to have buttermilk on hand you can try this simple substitution.Place one tablespoon of lemon juice or white vinegar in an empty one cup measuring cup.Fill with milk to 1 cup.Let stand for 5 minutes then use in any cake recipe that calls for buttermilk.

Hundreds and Thousand Biscuits A great one for the kids. 60g butter;1/3 cup caster sugar;1 egg;1/2 tsp vanilla;1 tsp milk;2/3 cup s.r flour;1/2 cup plain flour;200g pack of 100's & 1000's;extra milk. Cream butter,add sugar gradually,beat till light and fluffy.Add well beaten egg,vanilla and milk (1 tsp is correct)add sifted s.r flour,mix well;gradually add sifted plain flour until dough is firm enough to handle.Refrigerate at least 1 hour. cont.

Roll out dough to 5mm thickness between two sheets of greaseproof paper.Cut with floured 5cm biscuit cutter.Place on lightly greased oven trays and brush with milk.Sprinkle with 100's & 1000"s.Bake in mod oven 8-10 mins.Allow to cool on trays before removing. Makes about 30

Press mixture evenly over base of prepared tin.Bake in mod hot oven for about 12 mins or until lightly browned,cool.Spread base evenly with apple,sprinkle with topping,bake in mod oven until lightly browned;cool in tin.TOPPING: Sift flour and cinnamon into bowl,rub in butter and stir in sugar.

Golden Energy Nutties 125g butter;1 tsp vanilla essence;1/2 cup caster sugar;1 egg;3/4 cup s.r flour;1/2 cup plain flour;2 tbsp milk;40g Nutrigrain;1/2 cup unsalted,roast peanuts,chopped. Beat butter,essence,sugar and egg in small bowl until light and fluffy.Stir in sifted flours and milk,then nutrigrain and nuts.Drop 2 level tsp of mix together onto greased oven trays-allow 5cm between each.Bake in mod hot oven 10 mins or until lightly golden brown. Cool on trays.Makes about 50

Triple chocolate chunk cookies 175g butter, at room temperature
3/4 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
2 tsp vanilla
1-1/2 cupsall-purpose flour
1/2 cup cocoa powder
1/2 tsp baking soda
1/2 tsp salt
1-1/2 cups white chocolate chunks, about 250 g or one bag of white chocolate chips
1 cup chopped almonds, optional

1. Preheat oven to 180C In a large bowl, using an electric mixer, beat butter with granulated and brown sugar for 2 minutes. Beat in eggs and vanilla until smooth.
2. In a small bowl, using a fork, stir flour with cocoa, baking soda and salt. Beat into butter mixture just until combined. Stir in chocolate and nuts. Drop tablespoonfuls of dough about 2 inches apart on ungreased baking sheets. Bake in centre of 180C oven for 10 to 12 minutes until edges are firm. Bake a shorter time for soft chewy centres. Cool for 2 minutes on baking sheets. Remove to wire racks to cool.

Louise Slice -easy recipe 100g butter, 1/4 cup sugar, 2eggs, 1 1/2 cups flour, 2tsp baking powder,1/2 cup raspberry jam, 1/2 cup sugar and 1/2 cup coconut.
Melt butter in a pot big enough for all the ingredients, and stir in the first measure of sugar. Separate your eggs and add yolks to the pot and mix well.Sift in flour and baking powder and mix to combine.Spread into a sponge roll tin, put your jam on top of that, then in a different bowl beat your egg whites until they are stiff, put in your second measure of sugar and coconut. Spread over jam.
Bake at 180oC for 20-25 minutes or until cooked and golden.
