Penny130.Oops,sorry about that have not been on here for a while -about time I posted some more recipes. Recipe #71 for the raspberry coconut slice has 1/3 cup of sugar, 2 eggs and 2 cups of coconut for the topping. It is a really lovely slice.

Oaty Nut Crispies 125g butter;1 tsp vanilla essence;3/4 cup brown sugar,firmly packed;135g rolled oats;1/4 cup chopped pecans or walnuts;3/4 cup s.r flour. Beat buttermsugar,essence & egg with electric mixer until light & fluffy.Stir in oats,nuts and sifted flour.Using floured hands, roll 2 level tsp of mixture into a ball.Place on greased oven tray,flatten slightly.repeat with remaining mix leaving about 5cm between to allow for spreading.Bake in mod hot oven (210-230c) for about 12 mins or until lightly browned.Cool on trays (makes about 45)

Bran & Apricot Cookies 70g Allbran;1 cup s.r flour;90g coconut;1/2 cup brown sugar,firmly packed;1/2 cup chopped glace apricots;125g butter,melted;1 egg,lightly beaten. Combine allbran,sifted flour,coconut,sugar and apricots in a bowl,stir in butter and egg. Place level tbsp of mix about 5cm apart on greased oven trays.Bake in mod hot oven(210-230c) about 10 mins or until lightly browned. Cool on trays (makes about 25)

I've just made the blue cheese biscuits and they are delicious! When it says 1/2 a t of cayenne pepper, it really means 1/2 a t. My mouth is burning a little. hehe

Homemade Oreos. 1 1/4c flour, 1/2c dutch processed cocoa, 1 tsp baking soda, 1/4 tsp baking powder, 1/4 tsp salt, 1c sugar, 150gm butter, 1 large egg. Process dry ingredients in food processor till blended and with motor on low, add in softened butter & egg until mix forms dough. Place spoonfuls of dough mix on baking tray leaving room for spreading. Bake for about 9mins @ 180°C. Allow to cool.cont.

Filling option 1: 60gms butter, 60gms kremelta, 2c icing sugar, 2 tsp vanilla. Beat together butter and kremelta and on low speed gradually add icing sugar and vanilla. Increase speed to high & beat 2-3mins until light & fluffy. Sandwich togther 2 biscuits with the cream filling.
Filling Option 2:
1/2c cream cheese, 2c icing sugar, 30gms butter, 1 tsp vanilla. Mix as above and sandwich cooled biscuits together with cream.

One from the archives I finally got around to trying the cheesecake brownie recipe rkcroft posted in this thread (no. 345), and all I can say is OMG, I am so glad those are going with Miss 6 to Sunday school tomorrow! Really nice, and had to give my husband a very stern look when he wanted to break into the stash for tonight's dessert. I'm so mean. They're so good.

Oreo Cookies. the recipe I posted earlier is fantastic.Don't bother with the Filling Option 1. Go with Filling Option 2 only.We couldn't stop eating the filling - it was addictive!

Oaty Nut & White Chocolate Slice This is from my nestle calendar and dangerously yummy!.
1C sugar,1.5C self-raising flour,1.5C rolled oats,150g butter melted,1 egg beaten,1C nestle white melts, 395g can sweetened cond milk,1tsp vanilla,1C hazelnuts (I used cashews).Preheat oven to 180C & line slice tin with baking paper. Combine oats,sugar & flour in lrg bowl. Add butter & egg & mix well. Press half mixture into tin. Combine scm & melts in pot & heat gently,stiring until melted. Remove from heat & stir in vanilla & nuts. Spread this over base & crumble rest of oat mix on top. Bake 30 min approx until golden.

Russian Slice RUSSIAN SLICE - 125 g butter, 1/2 cup sugar, 1tbsp golden syrup (melt together) then add, 1 egg, 1 cup flour, 1 tsp baking powder, and 1 cup sultana's & 1/4 tsp vanilla essence. Mix well & spread into tin. Bake 180*C 20 mins. Ice with butter icing when cold then sprinkle over toasted coconut
