I'm with you, kpmac I've read the above 3 recipes pretty carefully, & I still don't think I know what a parkin is. Does anyone know what size tin you're supposed to use!

OAT BISCUITS (Edmonds Illustrated cook book 1998) Delicately flavored with honey and cinnamon, I throw in half a cup of raisens too. INGREDIANTS: 125 g butter
1/2 C sugar
2 T honey
1 C flour
1 level t baking powder
1/2 t cinnamon
1 & 1/2 C rolled oats
1/2 C raisens or currents optional. METHOD:Cream butter sugar and honey till pale. Sift flour, baking powder and cinnamon

together. Add all drys to the mix and mix well. Roll Tablespoons of mixture into

balls. Place on a oven tray. Flatten with a floured fork to around 5 ml thick, a

bake at 180*C (160*c fanbake) for ten mins or until golden. Makes 30 small

ones.(I'm not one for fussing with rolling balls of biscuit if I dont have to, I roll

the mix into a log and chill for an hour then slice off 5ml thick slices to make the

biscuits. I find I get even thickness biccies and more biscuits for my mix that

way too.)

Parkin is a flat ginger "cake", made in a deepish slice tin. (Well. SIL made her's in one!)It is very moist and sticky. Un-iced. Very English, and from memory I think it has something to do with Guy Fawkes. I've only struck it once, and in the UK. Have never seen a recipe in any of my cookbooks for it.yet!

chewy chocolate chunk slice This is delicious! I made it the other day and everyone raved about.
1c sifted self raising flour, 1/2c desiccated coconut 1/2 c brown sugar, 1 tin condensed milk, 2 T cocoa, 125g melted butter, 200g chocolate- mix of dark, white, milk-whatever you prefer and 100g mixed nuts i like almonds and macadamia's. Preheat oven to 180C, mix together flour, sugar, condensed milk, butter, coconut and cocoa until smooth, pour into lined slice tin or a 22cm square tin. Roughly chop nuts and chocolate press chocolate into base and nuts on top. Bake approx 25-30 mins. Cool completely in tin do not remove while hot or warm as this will break.

crispy cracknels 1cup fl,1tsp bp,pinch of salt,60gm butter,1cup sugar,1cup coconut,1 lge egg. put flour,bp salt and butter in food processor,mix well add sugar,pulse,add coconut pulse till mixed thru,add eggs and run machine till clumps fall around blade.roll into a log 2.5 cm thick .slice into little discs 160 for 10-12 minmay slice easier if rolled into a log wrapped in glad wrap and refrigerated before slicing

Does anybody have the recipe for rocky mellow slice! I used to have it but I lost the recipe. It had a weetbix base. Appreciate any help.

This may be the one you are after,
Rocky Melon
3/4 c sugar
1c flour
2 tblsp cocoa
2 1/2 crushed weetbix
1 c coconut
1 tsp baking powder
6oz melted butter

Mix all together and press into flat tin, Bake 15 mins in moderate oven.Allow to cool.

Topping
Dissolve 2dstsp gelatine in 1c boiling water.Add 2c sugar and beat well, until thick and fluffy.Colour yellow ( can use a drop of red instead,) add vanilla and pour over cake.Sprinkle withcoconut.

I melt the butter in the microwave before creaming it with the sugar. Quick, easy and so delicious.
