Parkin 1 1 lb. Fine oatmeal, 1/2 tsp. bicarbonate soda, 1 lb. Dark treacle, 2 tbsp. demarara sugar,1/4 lb. butter, 1 tbsp. milk, 1/2 oz. Ginger.Rub butter into oatmeal, add ginger and sugar.
Melt treacle.Dissolve soda in milk.Mix everything together.
Line baking tin with well greased paper and pour in mixture.
Bake in a low to moderate oven for 1/2 - 3/4 hour.

Parkin 2 Rub 2ozs [1/2 stick] margarine and 2ozs [1/2 stick] lard into half a pound [2 US cups] of flour, add half a pound oatmeal and a quarter of a pound 1/4 cup] sugar. Mix well then stir in 4 tablespoonfuls treacle melted, a good half teaspoonful bicarbonate soda, mix to light batter with milk, put into a greased tin and bake in slow oven
about 1 hour. [Use 300 degrees, check at 45 mins with toothpick to see if done.]

Parkin 3 SPONGE PARKIN : 10ozs/2-1/4 cups flour, 4ozs/1/2 cup sugar, 2ozs/4 tablesp. lard, 1oz/2 tablesp. butter, 6ozs treacle, 1 gill/5 fl. ozs. milk, 2 teaspoons baking powder, half teaspoon bicarb soda/baking soda, a little Ginger.Bake 1 hour in slow oven. (275-300 degrees, check at 45 mins.)

I use Whittaker's Whenever the Whittaker's 250g blocks go on a good special I stock up on the Dark Block, 62% Cacao, and Dark Ghana 72% blocks.I then chop them into any recipes where I require choc chips or chunks.The Old Gold Cadbury line works well too, but I prefer the Whittaker's. These are also nice for melting into a ganache.

Chocolate Pie recipe! Does anyone have a recipe for chocolate pie!Had one at bb's the other day, had to buy it because it said "chocolate" and "pie".Wasn't disappointed!

DATE JUMBLE 125g butter, 125 g sugar, 3/4 C milk, 250g date, chopped, 185g flour, 60g cocoa. Warm butter and sugar in milk in a saucepan until butter melts. Stir in dates then sifted dry ingredients, Mix well and bake in a slice tin 165C for 30 mins. (Now I am typing this out, I realise I cooked mine @ 175 for abt 12- 15 mins though). When cold ice with chocolate icing. This is a softer almost cakey slice. Very quick and easy too.

OMGoodness oscar, you are right. Seems a lot of sugar indeed. If it's any help, this is the recipe I use. Choc Chip Cookies: 1 egg,
75 grams butter,½ cup brown sugar,
½ cup white sugar, ½ cup chocolate chips or ¾ cup large chocolate buttons, 1 cup sr flour,½ teaspoon baking soda. Make two traysful.

baznmiss heres a recipe for Choc Caramel Pie. its friggen nice! 125gm pecans, 3 eggs, 1/2c pure maple syrup, 1/2c brown sugar, 80gm melted butter, 200gm dark choc chopped, 1/4c cream. Pastry: 1 1/4c flour, 1/3c brown sugar, 2T cocoa, 125gm chilled butter chopped, 1 egg beaten. Make Pastry 1st: Combine flour, sugar, cocoa & butter in food processor. Whiz until fine crumb stage. Add egg & whiz till mix comes together. Take out & knead gently till smooth. Press into a 15cm disc, wrap up and chill 30mins. Roll out on floured surface till 0.5cm thick. Line a 22cm loose based pie pan. Trim excess. Blind bake @ 180°C fr 15mins till firm. Remove baking weights & bake a further 5 mins. Remove from oven.cont.

Choc Caramel Pie cont. .Spread chopped pecans over hot pastry bse. Whisk eggs, maple syrup, brown sugar and butter together. Pour over pecan nuts. Bake for 25-30mins or until just set in centre. Set aside to cool completely. Combine cream and choc in heatproof bowl & microwave on med/high for 1-2 mins stirring every minute till smooth. Spread over choc pie and leave to set for about 3 hours before serving.

another one. Easy Choc Tart. 250gm good dark choc, 150gm butter, 3T golden syrup, 3eggs + 1 yolk, 30gm flour, 50gm caster sugar, 1 bought 23cm sweet tart shell (from supermarket) or roll out some ready made sweet short crust pastry or make your own. Melt choc, butter and golden syrup in bowl over simmering water. Cool. In separate bowl, whisk eggs, yolk, flour & sugar. Gradually add choc mix to the egg mix. Pour into tart shell and bake @ 180°C for 25mins. The filling will wobble slightly but will firm on cooling. Its meant to be moist.
