PUMPKIN COOKIES WITH CREAM. .CHEESE ICING
For the cookies:
1 cup sugar
2 sticks unsalted butter, softened
2 tablespoons Maple syrup
2 eggs
1 cup canned pumpkin
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground all spice
1/4 teaspoon freshly grated nutmeg (can use dried)
Pinch ground cloves
2 1/2 cups flour
2 teaspoons baking powder
Pinch of salt
(May add 1/2 chopped pecans, if desired)
For the frosting:
2 (8-ounce) packages cream cheese
1 cup confectioners sugar
1/4 cup milk
1 tablespoon vanilla extract
Zest of one lemon or one orange
For Garnish:
Whole pecans

Preheat the oven to 350 degrees F.
In a mixer, cream the sugar and the butter until light and fluffy.
Add the maple syrup and eggs. Mix to incorporate.
Add the pumpkin and mix to incorporate.
Sift together the flour, baking powder, salt, cinnamon, allspice, nutmeg and cloves.
Add the dry ingredients to the batter and mix well.
Drop rounded tablespoonfuls onto ungreased cookie sheets.
Bake for 10 minutes, or until lightly golden brown around the edges.
Cool on racks. When cool, ice with the cream cheese frosting.

For the Frosting: In a mixer, add the cream cheese. Beat until light and fluffy. Beat in the powdered sugar until smooth. Add milk and vanilla. Beat until smooth. If frosting is too thick, thin with a little more milk. Fold in the lemon/orange zest. When cookies are cool spread with some of the frosting. Garnish with a whole pecan.
These are also yummy, came from my sister in America so you'll have to convert where necessary. Confectioner's sugar is our icing sugar.

havn't read all of these but gonna put this on anyway in case you don't have it.cut up 3 mars bars or moro bars and 90gms butter. melt these then add 3 cups of rice bubbles. spread into a slice tin then.melt a king size block chocolate with 30gms butter and spread over other. put in frdge to set.hint:cadbury dream is dreamy over the top

Yum - got this off recipezaar last night They're nearly all gone!
Sunflower cookies:
Ingredients
1/2 cup oil
3/4 cup brown sugar
1 egg
1/2 teaspoon vanilla
3/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups rolled oat
3/4 cup sunflower seed
Directions:
Cream oil, brown sugar, egg and vanilla. Add flour, soda, salt (unless seeds are salted). Add oats and sunflower seeds.
Cook @ 180 degrees 10-15 minutes.

for #322 WAINUI SPECIAL; 1 cup each of flour - cornflakes and coconut, 1/2 cup sugar, 2 tabs cocoa, 1 tsp b powder, 5 oz butter. mix dry ingred add butter pres into slice tin, bake 1/2 hour 180oc. Ice with chocolate icing sprinkle with coconut , SLICE WHILE HOT. it is really crunchy.

Valentino's Chocolate Caramel Slice 125g crushed plain sweet biscuits, 80g unsalted butter melted, 2 tbsp coconut, 400g sweetened condense milk, 125g butter, 1/3 c caster sugar, 1/3c golden syrup, 250g milk choc melts and 1 tbsp vegetable oil. Lightly greased 30 x 20 cm tin and line with foil. Grease the fpoil. Combine biscuit, melted butter & coconut together. Press the mixture into tin and smooth surface. Combine condensed milk, butter, sugar & syrup in a pan. Stir over low heat for 15 minutes or until sugar has dissolved, mixture is smooth, thick & lightly browned. Leave of heat to cool slightly. Pour over the biscuit base and smooth the surface. Put the choc melts & oil in heatproof bowl, stand over simmering hot water, stir until melted and blended. Spread choc over caramel. Allow tp partially set before marking into triangle shap slices. Refrigerate until firm.

Valentino's Jaffa Fudge Slice 200g plain sweet biscuits, 1c chopped walnuts, 125g dark choc chopped, 1/2c icing sugar, 125g butter, 1tbsp grated orange rind & 125g dark choc extra melted. Lightly greased 18 x 28cm tin, line with baking paper or foil overhanging two opposite sides. Put bicuits & walnuts in food processor, process until resembles coarse breadcrumbs. Put mixture into large bowl, make a well in centre. Put the chopped choc, sifted icing sugar & butter in saucepan, stir over low heat until melted & smooth. Remove from heat, stir in rind then pour into the biscuit mixture, stir until well combined. Press mixture into tin, chill for 10 minutes. Spread the melted choc over and chill for 30 minutes or until set. Cut into slices.

Ginger Delights. Very nice slices. 100g glaced ginger, 1 3/4c flour, 1c raw sugar, 160g butter melted & 1 egg. Ginger filling:- 80g butter, 1 tbsp golden syrup, 3/4c icing sugar, 1tsp ground ginger & 1/4c chopped Macadamia nuts toasted. Lightly greased 19cm square tin, line with baking paper overhanging two sides. Toss the ginger into 1-2 tbsp of the flour, then chopped finely. Put ginger in bowl with remaining flour, sugar, melted butter, egg, pinch of salt and mix well. Press mixture into tin & smooth surface. Bake @ 180c for 40-45 minutes or until firm & golden. Cool in tin before lifting out. Ginger icing:- Mix butter, syrup, icing sugar & sugar in pan over low heat stirring often. Bring just to the boil then remove from heat. Spread over base & sprinkle nuts. Leave to cool before cutting.

I made this for the family and it was a HUGE success. Everyone LOVED it. I only had 2 eggs so I substituted 1T golden syrup for the missing egg. It's the first time I've made it so not sure how much difference the golden syrup made but I can recommend the addition of it. The syrup was not that popular really though. I'm not a huge huge fan of boysenberries so next time I make this I am going to try it with raspberries I think. Or maybe dried apricots and white chocolate pieces. Mmmmmmm
