This is so yummy and you cant even taste the zucchini. Base:
100g chilled butter
1/2 cup sugar
1 cup standard (plain) flour
Filling:
2 large or 3 small eggs
1 tsp vanilla essence
1 1/2 cups brown sugar
1 cup desiccated coconut
1/4 cup standard (plain) flour
2 Tbsp cocoa
1/2 cup dark chocolate melts or 90g chopped dark chocolate
1 tsp baking powder
1/4 tsp salt
1 1/2 cups grated, squeezed zucchini, I just hand squeezed it.

paghan, Apr 5, 12:45am
Method *Heat oven to 160C (150C fanbake), with the rack just below the middle. Line base and sides of an 18 x 28cm pan with baking paper, folding it at the corners so the topping mixture cannot run underneath during cooking.*For base, put cold cubed butter in a food processor (or grate it into a large bowl) with the sugar and flour. Process in bursts, or rub in butter by hand, forming small, even crumbs.*Tip the crumbly mixture into the prepared pan and press down firmly and evenly. Bake for 10 minutes.*For filling, mix the first three ingredients well in the unwashed food processor or a bowl. Mix everything else (except zucchini) in another bowl.Grate, squeeze, then measure the unpeeled zucchini.*Toss with the other ingredients, then add to the egg mixture.*Process briefly, or stir together, then pour over partly baked base

paghan, Apr 5, 12:45am
Cont. .*For topping, sprinkle chocolate melts over the surface.*Bake for 45 minutes or until the centre feels firm. Cool overnight before cutting into bars or squares of desired size.*Serve as a treat at any time of the day. Store in one layer in a shallow, lidded container in the refrigerator, for up to 5 days. If it lasts that long

elliemrush re muesli bar recipe hi, I just got my Destitute Gourmet books in the mail and found the Muesli Bar recipe for you.
200g butter, 1 cup sugar, 5 cups muesli (any kind).
Grease a sponge roll tin with butter or cooking spray. If the muesli you are using is all large grains then add couple handfuls of finer grain variety to help bind the mixture - say 2-3 crumbled weetbix, some wheatgerm, or finely procedssed rolled oats. This will help thebars retain their shape. contd.

natcat2104, Apr 11, 8:57pm
muesli bars contd. Melt butter in large pan, add sugar and boil gently until mixture is a light golden colour - about 5-7mins. Don't stir mixture or it will turn sugary. When it's golden, turn off the heat and stir in the muesli, coating it well.
Pour mixture into the prepared tin and press down firmly. (wet hands means mix won't stick to hands.) With a spatula or fish slice press all around the edges, making sure the mix is as firmly packed as possible.
When cool cut into bars.
Hopefully this is the one you were after. Let me know if there is any others you might want and I'll post them for you.

Hi RKCroft Just wondering if there are some amounts missing from the ingredients in your continental slice, there are no mearsurements for the sugar, biscuits and coconut. I assume that the butter, custard powder, icing sugar and hot water are the ingredients for the filling. Many thanks

rkcroft, Apr 14, 8:33am
hawthorn11.yip you're right. The first part's missing. Here is is posted again: Base: 125gm butter, 3T cocoa, 1tsp vanilla, 2c crushed plain or malt biscuits (1 250gm pkt), 1/4c caster sugar, 1 egg beaten, 1c coconut. Filling: 60gm butter, 2T custard powder, 2c icing sugar, 2T hot water. Melt butter, sugar & cocoa together over low heat. Add beaten egg then sugar, biscuits & coconut. Press into a lined slice tin & pop in freezer whilst making filling. Cream filling ingredients together and spread over base. Return to freezer whilst making a standard chocolate icing. Ice with chocolate icing, leave to set in fridge and slice into small pieces. Store in fridge.
