BBQ Steak with creamy mushrooms and guacamole - herb & chargrilled pepper foccaccia bread is about to go in the oven too and still have a salad to throw together - cant wait!

We're having chilli, annoying the first night as it needs a while to simmer to get the best flavour, but great for the next two nights as we'll have leftovers (and the brilliant thing with chilli is you can have it different ways - rice tonight, with baked spuds tomorrow and corn chips on Friday). Wouldn't mind some of your guacamole to go with it, ant_sonja! ;-)

i had a yummy chicken stirfry with beans (that i grew!!!), cabbage, yellow pepper, broccoli, garlic, ginger, chilli, mushrooms, courgette and carrot!!!

Bitter balls is a dutch crumbedmeat ball which is deep fried. Its all cooked then made into balls, crumbed then fried:)

I first made them for xmas brunch at my darlings parents place and they were a winner all round with the family, so its the dish I will be taking every year now as its bring a plate brunch:)

deep fried meat balls - nothing wrong with that - maybe I wouldn't crumb them - but then you are not low carb - so go for the crumbs.

Can we have the recipe?

1 Tspn minced Onion.. ( use way more and finely chop)
2 Tspn Butter
2 Tspn Flour
1kg Cooked Mince
1 C milk or stock
1 Tspn Chopped Parsley
1 tspn salt
1/8 tspn Curry
1 1/2 C grated Cheese
1 tspn Wost sauce
Breadcrumbs and eggs for crumbing

Melt butter and cook onion till clear.
Add flour and mix well and cook.
Slowly add milk or stock till no lumps.
Add the rest and simmer or so mins.
Cool and place in fridge for a few hours.
Roll into balls and crumb twice.
Place in fridge to set before cooking.
If freezing, coat 3 times.

If using for finger food, small balls or a bit bigger for meal size:)

When I added all and simmered, I cooked it down so it wasn't a very wet mix!

Marinate meat (chicken or fish) in this: ~
crushed garlic
grated fresh ginger
1/4 C soy sauce
1/4 C worcestershire sauce
3 T sweet thai chili sauce
1 t brown sugar
1 T oyster sauce.
Fry meat then throw in whatever veges you like and stir fry.Then add a tin of coconut milk (forget the diet!) MEANWHILE~! in a large bowl pour boiling water over vermicilli noodles to expand and soften, drain off liquid, cut up with scissors then throw into the stirfry.Serve and devour!!

I had a chicken out. Planned on being all creative but been out all day and now its 4pm, so bacon sammies I think and I'll do chicken tomorrow. Liking the chilli and noodle idea here.

Cold chicken, salad (lettuce, carrot, zuchinni, mushrooms, tomatoes, onions) and Tomatoes, Potato salad, cucumber. off all the veges only the mushies not from our vege garden.

Lythandle1, heres my chilli, chicken noodle dish if your interested :o)
Chilli cashew chicken noodles

* 200g thick noodles
* 2 tablespoons oil
* 2 onions, sliced into wedges
* 4 large red chillies, seeds removed and chopped
* ¼ cup (55g) white sugar
* 4 chicken breast fillets, sliced
* 1 red capsicum, sliced
* 250g green beans, trimmed and halved - optional
* ¾ cup (115g) unsalted roasted cashews
* 1 1/2 cups chicken stock
* 1 tbsp cornflour mixed with 2 tbsp cold water
* 2 tablespoons soy sauce
* 2 tablespoons lemon juice
* ¼ cup coriander (cilantro) leaves
* 2 spring oni9ons finely sliced
* Chilli sauce to serve
Heat pan over high heat. Add the oil and chicken, cook, stirring, for 4 minutes or until the chicken is golden. Remove from the pan and set aside. Add the oil, onion, chilli, capsicum, cashews, beans if using, sugar and cook for 4 minutes..Add the chicken stock, soy sauce, lemon juice to the pan. Stir the combined cornflour and water into the stock mixture in the pan. Stir over heat until the sauce bubbles and thickens. Return the chicken and to the pan and simmer gently for 5 minutes, until chicken is cooked. Add noodles. Sprinkle with coriander and spring onions. Serve with chilli sauce

I'm doing cauli mash instead with wholegrain mustard in it. Big crocky stew as well - and braised cabbage.

It's a packet-can-bottle dinner here tonight.

1 packet spiral pasta
1 can smoked salmon (hope it's ok - been sitting in pantry for ages)
1 bottle ofPasta Bake sauce
Mix together and bake for a little while.

I'm such a kitchen slave! :)
