Dont necessarily agree with davidt4 comment. sometimes they move down the list and they do get overlooked. I doubt there will be "no interest" in this thread. Thanks for bumping it up Phil - I also bumped up the biscuits ad slices thread which has some fab recipes on it.

Ginger Beer Fruit Loaf. 200gm dried apricots, 200gm raisins, 250gm sultanas, 1/2 tsp bkg soda, 1 1/2c ginger beer, 1/2c golden syrup, 2 lge eggs beaten, 1/2 brown sugar firmly packed, 1 1/4c self raising flour, pinch salt, 2tsp cinnamon, 1 tsp mixed spice. Place dried fruit in bowl sprinkle with bkg soda. Heat ginger beer and golden syrup in saucepan & pour over fruit. Cover with glad wrap and leave to soak overnight. Next day stir beaten eggs and brown sugar into fruit. Sift in flour, salt and spices. Stir to combine. Spoon mix into a loaf tin and bake @ 160°C on fanbake for 1 hr. Lasts up to 5 days stored in airtight container.

Jaffa Fudge Cake (very delicious and improves with age)3/4c cold water, finely grated zest & juice of 2 oranges, 2 drops orange essence, 250gm butter, 2c caster sugar, 200gm dark choc, 1 1/2c plain flour, 1/4c dutch cocoa, 2 eggs lightly beaten. Jaffa Ganache: 1c chopped dark choc, 1c cream, 2-3 drops orange essence, zest of 1 orange. Combine water, zest, juice, essence, butter, sugar & choc in saucepan. Heat gently until choc has melted & sugar dissolved. Remove from heat & cool slightly. Whisk in sifted flour & cocoa. Stir in beaten eggs. Pour into a lined 22cm springform pan. Bake @ 175°C fanbake for 1 1/4hrs. Icing: melt together gently in microwave or over double boiler till smooth. Refrigerate till thickened. Spread on cooled cake.

White Choc & Banana Mud Cake. 250gm butter, 250gm white choc, 150ml hot water, 1c caster sugar, 1 3/4c flour, 1c self raising flour, 1tsp vanilla, 2 eggs, 4 overripe bananas mashed. Melt together the butter & chocolate in the microwave until smooth. Add the water & sugar & microwave until sugar has dissolved. Set aside to cool. Meanwhile, mix together the mashed bananas, eggs & vanilla. Add the sifted flours to the cooled chocolate mix. Add in the mashed banana egg mix. Pour batter into a lined tin & bake @ 180°C for between 45mins to 1 hour until cooked. Ice with a white chocolate icing or leave plain. Nice served warm with custard if left plain.

Blueberry Shortcake Spread 3/4c whole hazelnuts on baking tray, bake5-10 minutes then place in clean tea-towell and rub to remove skins, then roughly chop. Process 2 1/4c self-raising flour, 1 1/2tsp cinnamon,3/4c demerara sugar, 150g unsalted butter chopped and 1/2 of hazelnuts in food processor until finely chopped. Add 2 eggs, process until smooth. Press half of mixture into lightly greased 20cm cake tin then spread 1/2c blueberry jam evenly over the mixture. Lightly knead the remaining hazelnuts into remaining cake dough then press over the jam layer. Sprinkle extra 1tbsp demerara sugar over the top and bake at 180c for 50 minutes. Leave in tin for 15 minutes before turning out onto wire rack to cool. Serve with fresh blueberries and cream.

There are some great recipes in here! About a year ago I got a recipe from here for a roasting dish size chocolate cake. it wasn't Mel's recipe, the one I'm thinking of had yoghurt and a small amount of coffee in it.Does anyone have that recipe, because I've lost it and it's my daughter's birthday again, so time to do some more baking. TIA.:-)

oops never mind!I found it in the trademecooks forum - it's the 'bloody good chocolate cake' and if anyone else wants the recipe, it's very straightforward: 2 C sugar, 2 eggs, 1 C yoghurt, 3/4 C cocoa, 200 grms melted butter, 2 tsp baking soda, 1 1/2 tsp vanilla essence, 1/4 tsp salt, 3 C self-raising flour, 1 C black coffee.Mix all together, pour into lined roasting dish and bake at 150degC for approx 30 mins or till skewer comes out clean.

Meat Dish Cake melt 500 grms butter and 2 tblspns golden syrup, add 4 eggs & 2 cups caster sugar (beaten to-gether), then 4 cups flour, 4 level tspns cocoa. 4 level teaspns baking powder. Add slowly 3 cups milk (room temperature) 4 tspns baking soda . Bake at 180c(350F) approx 40 mins in greased floured( or baking paper lined) 30x38cm Roasting dish. Cuts into 4 goodsized cakes. Freeze three ice one to eat !

cappucinno Cake 150grms Butter,3/4 sugar(caster), 3 egg yolk,1 1/2 cups flour,2tsp Baking Powder,1/2 cup strong black coffee(cooled), 1 tspn cinnamon.
Topping: 3 egg whites,3/4 caster sugar,
Melt butter mix with sugar and egg yolks. Fold in sifted flour and baking powder alternatively with th coffee. Place mixture in 20cm round spring-form tin lined on base with with baking paper. Spread topping over.To make topping, beat egg whites until stiff, gradually beat in sugar beating until thick. Bake at 180c for 45-50 minutes. Cool in tin- dust with cinnamon

Queen Elizabeth Cake - Scrumptious 1 cup Dates,1teaspn vanilla essence,1 1/2 cups flour,1cup caster sugar,1 cup boiling water,125grms butter (soft),1/2 teaspoon salt,1 teaspn baking powder, 1 teaspoon baking soda, 1 egg.
Pour boiling water over dates and add baking SODA & leave to stand whil preparing the following: Cream butter and sugar, add beaten egg and vanilla, then sifted dry ingredients, add date mixture THIS IS A VERY MOIST MIXTURE Bake 35-45 mins in 160c oven in 20cm linedspring formtin,
ICING: 1/2cup brown sugar,1/2 cup crushed walnuts 1/2 coconut, 4 tablspns butter, 3 tablespoons top milk or creamPut ingredients into saucepan (except walnuts ) and boil for 3 minutes. Add crushed walnutS and put on cake while both are still warm. Place under for a few moments to brown WATCH!Delicious.

apparently this cake was commissioned by the late Queen Mother Elizabeth many years ago. A great "Special Cake" for those special ocassions.

found this in the local paper a couple of years ago, very nice -
Orange Pulp Cake
2 medium oranges
4 large eggs
2 cups raw sugar
1 cup oil
1 cup white flour
1 cup wholemeal flour
2 tsp baking soda
1 tsp cloves
1 cup walnuts, chopped
1 cup coconut
Place whole oranges in a large pot of water. Bring to the boil then reduce to a simmer for about an hour. Drain & cool. Place in processor & process until really pulpy. Set aside. Combine flours, baking soda & cloves, set aside. Process eggs & sugar for 2 minutes. While processor is running, pour in oil slowly. Pulse in the orange pulp, walnuts & coconut alternately with the dry ingreds. Bake @ 180° C in around tin for an hour.
Ice with cream cheese icing.
Icing:
2 cups icing sugar
50gr softened butter
50 gr lite cream cheese
1 tsp vanilla
Beat all these ingreds together until smooth & pale in colour. Spread onto cold cake. Can decorate with orange rind & chopped walnuts.

And also -
Carrot & Orange Cake
1 cup oil
1 cup brown sugar
2 eggs
1 tab vanilla ess
grated rind 2 oranges
1 tsp baking soda
2 cups grated carrot
½ -1 cup sultanas (or chopped dates)
3 cups whole meal flour
1 tab mixed spice
2 baking powder
1 cup plain yoghurt

Mix together oil, sugar, eggs, vanilla, orange rind, yoghurt. Then add carrot & mix through. Add sultanas then dry ingreds (making sure baking soda is well dissolved). Bake in a sprayed round cake tin @ 160°C for approx 1 hour or till skewer comes out clean.
Ice with a cream cheese icing-adding a little orange juice to combine. Can decorate with a little orange rind, chopped walnuts, slivered almonds, & chopped apricots sprinkled around the perimeter of the cake.

BEST EVER ORANGE CAKE 185 grms butter softened, 3/4 cup Caster sugar,3 big eggs - beaten,2 cups plain flour,1 tablespoon Baking powder 1 teaspoon Grated orange rind*4-6 tablespoons fresh orange juice. SYRUP1 1/2 cups icing sugar,2/3 cup fresh orange juice,1 tablespoon of orange or other fruit liquer(triple sec is
good)1 teaspoon grated orange rind** you should always grate citrus directly into bowl in which it is being used : if you grate onto a plate or board most of the flavoursome oils are left behind.
METHOD: Grease an 18 cm round tin or similar(if using baking paper remove after cooking)Cream butter and sugar until very light and fluffy indeed and then gradually add egg (to prevent curdling just add a little of your flour). Sift the flour and baking over the mixture and fold in gently Add the grated orange rind and enough jjuice to give a dropping consistency. Transfer to tin and bake at 180c for about an hour (sometimes a little less time) Remove from oven and cool 10 minutes in tin. continued

continued SYRUP AND ICING:-
Sift the icing sugar and dissolve it in the juice and liquer, stir in the grated orange rind. Turn the cake out onto a wire rack (good hintuse 2 racks put top down onto one place second rack on top and flip over!)place a plate under the rack then using a knitting needle or skewer pierce holes right through cake THE CAKE MUST STILL BE QUITE HOT. spoon over the syrup. Retreive any that drips onto the plate and pour back onto the cake. When all is absorbed and the cake is quite COLD, WRAP IT IN CLING FILM AND THEN FOIL AND KEEP FOR THREE DAYS BEFORE CUTTING. thats if you can resist the temptation to eat it ! Soooooo good -Sliced thinly and served with fruit and whippd cream makes a rather special dessert.
