Moist Apple & Date Cake This is very moist and is not "Cakey". Use Granny Smith apples.
2 apples,finely chopped;1 cup chopped dates;1/2 tsp baking soda;1 cup boiling water;185g butter;1 cup caster sugar;1 egg;2 cups plain flour. Grease a 23cm square slab pan,line base and sides with paper;grease paper well. Combine apples,dates,soda and water in a bowl,cover,cool. cont.

Cream butter & sugar with mixer until light & fluffy,beat in egg. stir in seifted flour & apple mixture.Pour into tin. Bake in mod slow oven for about 1 1/4 hours. Stand 5 mins before turning on to wire rack to cool.

Overnight Sultana & Orange Jelly Loaf 2 cups boiling water;1 pkt orange jelly crystals;1/2 cup white sugar;60g butter;2 tbsp baking soda;37g sultanas;3 cups flour;3 tsp baking powder;1/2 cup chopped walnuts,optional.Combine water,jelly crystals & sugar in a lge bowl,stir to dissolve.Add the butter,baking soda and sultanas.Stir to mix well. Cover and leave overnight or at least 8 hours.Next morning add the rest of the ing,mix well and pour into lge greased and baking paper lined loaf tin.Bake 1 1/4 hors at 180c.Cool on a wire rack.

Caramel Butter Cake 125g butter;1tsp vanilla essence;1 cup brown sugar,firmly packed;2 eggs;1 tbsp golden syrup;1 cup plain flour;1/2 cup s.r flour;1 tsp ground cinnamon;1/2 cup milk.CARAMEL ICING:1 cup brown suga,firmly packed;30g butter;2 tbsp mil;2 tsp milk,extra.Grease a deep 20cm round cake tin,line base with paper,grease paper.Cream butter,essence and sugar in small bowl until light and fluffy cont.

cont. beat until combined. Beat in golden syrup.Transfer mix to a lge bowl,fold in sifted dry ing and milk. pour into prepared tin,bake in mod oven (180) for about 50 mins.Stand 5 mins brfore turning on to wire rack to cool.Top cold cake with caramel icing.CARAMEL ICING:Combine sugar,butter & milk in a saucepan,stir constantly without boiling until sugar is dissolved.Bring to boil,reduce heat,simmer 3 mins uncovered without stirring.Cool to room temp. Stir in extra milk to make a spreadable consistency.

Banana cakes. Does anyone have a recipe for banana cake with butter!can only find ones made with oil.

hi milemko2 here is one Very Moist Best Banana Cake Recipe

2 cups flour,
1 teaspoon baking powder,
1 teaspoon baking soda,
1/2 teaspoon salt,
1/2 cup butter/margarine,
1 1/2 cups sugar,
2 eggs,
1 cup mashed banana,
3/4 cup sour milk **(2 tblspns vinegar per cup to make sour milk),
1 teaspoon vanilla.
Sift flour, baking powder, baking soda, and salt and set aside.
Make your sour milk and set aside.
Cream butter, add sugar gradually and cream together until fluffy.
Add eggs and beat well.
Add bananas and beat again.
Add flour mixture alternately with milk (small amounts at a time), beating well after each addition. Add vanilla.
Bake at 180 degrees C for 25 mins (although can usually takes about 40 mins!).

Banana & Mars Bar Cake. 150gm butter, 1/4c brown sugar, 2 eggs, 2 bananas mashed, 2c self raising flour, 3 x 60gm Mars or Moro Bars chopped, 1/2c milk. Beat butter & sugar till creamy. Beat in the eggs and mashed banana. Sift over the flour and fold through the chopped Mars bars along with the milk. Spoon into a baking paper lined loaf pan & bake @ 180°C for 50-55mins. Ice with caramel icing: 1 1/2c icing sugar, 1T milk, 2T golden syrup, 30gm soft butter. Beat icing ingredients together. Ice cool cake.

Here is Christmas Cake(Melt Butter) Ingredients:-sultanas125gm
Currants125gm
raisins 125gm
mixed peel (candied) 125gm
almonds (optional) 125gm
grated carrot 125gm
butter 125gm
sugar 200gm
water 125ml
brandy 50ml
salt 1/4tsp
bicarbonate of soda 1tsp
flour 225gm
cinnamon 1/4tsp
nutmeg 1/4tsp
ground ginger 1/4tsp
mixed spice 1/4tsp
eggs 4pc

Cont.Method Method
1. Place the butter, sugar and water into a large thick based pan and boil until a caramel stage is reached
2. Stir in the dried fruit and mix well
3. Add the brandy, salt and bicarbonate of soda
4. Mix the spices into a paste with a little water and add to the mixture
5. Stir in the sifted flour
6. Finally stir in the beaten eggs
7. Place the mixture into 20cm x 5cm round cake tin greased and lined with greaseproof paper
8. Bake in a pre heated oven at 100°C for 3 ½ hours
9. Remove from oven, allow to cool for 10 minutes before removing from cake tin and cool on a wire rack

Yummies Cake Ever Had this last night - YUM YUM YUM BLUEBERRY CINNAMON MACADAMIA CAKE 150g butter, melted 1 cup sugar 2 eggs 2 cups flour 2 teaspoons baking powder 2 teaspoons cinnamon 1 cup chopped macadamias 2 cups frozen blueberries To make Mix all ingredients together and spoon into a well greased 20-23 cm paper-lined cake tin. Bake at 160°C fan bake for 40-45 minutes of until golden and well cooked in the center. It is done when a skewer inverted in the center comes out clean. Cool on a wire rack. Serve warm, sprinkled with icing sugar.

bluberry macadamia even nicer if you cut in half and pop some cream fraiche in the middle - mmmmmm want some now! LOL will have to settle for a cup of tea instead!
