Kidney soup.

1 1/2 pints stock, 1oz butter, 1oz flour, 2 sheep kidneys.
seasoning, onion,carrot,turnip, celery enough to flavour.
Skin kidneys and cut up. Melt butter and fry kidney and flour brown. Add stock and let boil. Add veggies. Simmer till soft and rub through sieve. Some kidney may be served in soup.

My mother gave the cabbage 20 minutes in the pressure cooker.I loved it at the time and am tempted to try it again

You used to be able to buy stuff to preserve eggs.It was a silicate (sodium silicate!) which is a similar compound to glass, and commonly known as waterglass when it wasn't called Norton's Egg Preserver.One projects for kids involved putting waterglass in a jar and adding crystals of colourful compounds such as copper sulphate (and probably some iron compounds).They would "grow" into crystal gardens.

The theory of preserving eggs is yo make them airtight.

LOL My Grandma often talks about being served up brains! She reckons she liked them, almost believe her, as she likes tripe too :S

I used to help my great granny preserve eggs when her hens had been over-producing. Eggs were still on ration then and were much valued.
We rubbed their shells with a thick coating of Ovoline, which was very like Vaseline, then stored them in an earthenware crock in her cool dark pantry. The Ovoline stopped any air getting in.

I thought it was only my Mum but apparently EVERYONE's mums would put the cabbage on at breakfast to be ready in time for dinner haha!Thank goodness she picked up the pace and tried steaming it later on in life

mum would boil then mash up brains with butter pepper/salt and serve it to us kids on toast (and I'm 42 and it was considered perfectly acceptable to serve that up for lunch!)I had brains a l'orange at Dr Duddings on Hauraki Corner years ago ... it was actually nice!

I haven't made it...but it appears to have the ingredients to make it "work".Maybe a brewer will have an opinion??
