No! No! No! If they don't get 'bumped' or have anything 'added to them' how long do they stay on for. I don't want to 'bump' if it is not necessary.BUT.I have noticed that recipes go back a whole week if they haven't been 'bumped' or 'added to'.BUT.in the "General" thread they only go back 3 or 4 days. I would hate to miss out on a recipe I wanted because I haven't bumped & the thread disappears before I realise.

The threads don't get removed here - they simply slide down the list until if they are the last thread on page 5 and don't get bumped or added to - they dissapear into cybervoid!

Highlander Fudge Cake Fingers 2 1/2 cups Plain Biscuit Crumbs, 1 cup coconut, 1/4 cup chopped raisins, 2 tablespoons cocoa, 1/2 cup Highlander Condensed Milk, 100g butter, 1 tsp vanilla essence and choc icing (Recipe Follows this recipe). Combine crumbs, coconut & raisins. Mix the cocoa & condensed milk in a small saucepan. Add butter, heat to boiling point stirring constantly. Remove from heat and stir in vanilla. Pour the milk mixture into the dry ingredients and mix well. Press into a greased shallow 20cm square cake-tin. Ice with Choc icing then cut into bars when firm.

Chocolate icing. 1 1/2 cups icing sugar, 3 tablespoons cocoa, 3 tablespoons butter softened, 2 tablespoons boiling water approx and 1/4 tsp vanilla essence. Place the icing sugar, cocoa & butter in a small bowl, pour in the water and add vanilla. Mix to a spreading consistency adding a little extra water if required.

noluck4 - I have no idea! We had only 4 here for a long time - they have only recently given us the 5th.It's a shame as there's so many great recipes and tips here, and they reach the bottom too fast!

COCONUT ICE SLICE PASTRY: 90g butter;1/4 cup caster sugar;1/2 tsp vanilla;1 egg yolk;1 cup plain flour;1/4 cup cornflour.
FILLING: 2 cups coconut;1 cup sugar;2 eggs;125g glac'e cherries.
ICING:1 cup icing sugar;1 tbsp butter;1 tbsp milk;red food colouring;2 tbsp coconut. PASTRY: Beat butter,sugar & vanilla until creamy, add egg yolk, beat well. Fold in sifted flours.If too dry, add 1 tbsp water. Divide pastry in half.Roll out one half on lightly floured surface to fit base of 28x18 lamington tin which has been lined with lightly greased aluminium foil cont.

extend foil 5cm over edges of tin for easy removal. Trim off any excess pastry. FILLING: Combine coconut sugar and eggs in bowl, add chopped cherries,mix well and spoon evenly over pastry. Roll out remaining pastry,fit over fillingmtrim if necessary. Bake in mod oven 25-30 mins or until golden brown, cool. ICING: Sift icing sugar into a bowl,add melted butter, milk and enough drops of food colouring to make it pale pink,beat until smooth. Spread icing over slice,sprinkle with coconut and cut into small squares.

Chocolate Caramel Slice. I've posted this in the baking thread also. It's so good and so easy though, so will add it here.Soften 150gms butter and stir in 3/4 cup brown sugar. Sift 2 (two) cups flour and 1 (one) tsp baking powder and add to the butter mix. Mix well. Press into a microwave slice dish. Elevate and microwave on high for 5 1/2 minutes, or till mix looks dry in the centre from the underside of the dish. Set aside. In a large bowl or jug, combine 50gms butter, 1 tablespoon golden syrup and 1 400gm tin sweetened condensed milk. Zap on high for 3 1/2 minutes, stirring twice during cooking, or till thicker and starting to change colour. Spread evenly over the base. Elevate and microwave on high for 2 1/2 minutes or till caramel bubbles. Ice with chocolate icing once cool and cut into squares or bars. This is just delicious. and so easy. We've also added some lemon juice to the caramel mix sometimes for a lemon flavour, and topped it with lemon icing. this is very good too. Enjoy. Cheers. Julie

Hi Jaykat. here 'tis. Russian Fudge. Place 750gms sugar and 1/2 cup milk into a saucepan and bring slowly to the boil, stirring to dissolve the sugar. Add 1/2 tin sweetened condensed milk, 100gms butter, pinch salt and 1 tablespoon golden syrup. Boil 30 minutes, stirring frequently. Remove from the element and beat till thick - about 5 minutes. Pour into greased tin. Mark out into small squares and cut when set. Vanilla and nuts may be added if desired. Enjoy.
