Bit rich for me, I have a recipe for a similar one that has dates in the middle and I prefer that.

just set fire to my weetbix slice :-(also do you chill the gingerbread before rolling out!I had to add extra egg to our gingerbread mix, but then i'd given it to the kids to knead and roll out!

M&M BISCUITS I used to have a great recipe for these, they had condensed milk, rolled oats and other 'stuff' in them, but I have lost the recipe.Does anyone have one I could use PLEASE, preferrably before the kids chew my ankles any further.

Apricot Date Bars. 3/4c dried apricots & enough boiling water to just cover them, 2c self raising flour, pinch salt, 1c brown sugar, 3/4c coconut, 1/2c dates finely chopped, 170gm softened butter. Soak apricots in boiling water for about 1/2 hour. Drain, then chop finely. Mix all ingredients together in a bowl then spread into a lined lamington tray. Bake @ 180°C for 25mins. Ice with lemon icing if desired.

Butterscotch Slice. 115gm butter melted, 1c brown sugar, 1c self raising flour, 1c coconut. Topping: 1T butter melted, 2T golden syrup, 1 tin sweetened condensed milk, melted chocolate of choice to drizzle or spread over top. Mix together brown sugar, flour, coconut and melted butter. Press into lined lamington pan and bake 180°C for 10-15mins. Mix together topping ingredients and spread evenly over cooked base and bake a further 15mins. Whilst still warm, spread with melted chocolate.

Butterscotch Bikkies. 125gm butter, 1 tsp vanilla, 1/2c brown sugar, 1T golden syrup, 1 1/4c self raising flour. Beat butter, essence, sugar and golden syrup in small bowl with electric beaters. Stir in sifted flour. Roll teaspoons of mix into balls. Place on lined tray, flatten slightly with for and bake @ 150°C for 20mins until firm. Recipe doubles very well.This is a nice tasty, plain biscuit.

Melt 2 king size bars choc( i use almond) and 1 tin condensed milk on mcorwave.Pour into lined slice time and refrigerate.

EASY EASY but needs to be kept in frige or freezer

Apple Crumble Slice 1 1/2c self raising flour, 1 1/2c coconut, 1/2c caster sugar, 185gm melted butter, 1 egg, 1 tsp cinnamon, 1 x 425gm can pie apple well drained. In large bowl combine flour, coconut, sugar and cinnamon. Mix in melted butter & egg. Press half the mix into a lined slice pan. Cover the base with apple. Crumble remaining mix over top. Bake @ 180°C for 35-40mins until golden.

Oaty cranberry & white choc cookies. 150gm butter, 3/4c brown sugar, 1 egg lightly beaten, 2 tsp vanilla, 1c plain flour, 1 tsp baking powder, pinch salt, 2c rolled oats, 1c white choc drops or chunks, 2/3c craisins (sweetened dried cranberries). Cream butter & sugar. Add in vanilla. Sift in the flour, baking powder and salt. Stir, then add oats to combine. Roll tablespoons of mix into balls, place on lined tray,flatten slightly with a fork. Bake @ 180°C for 12-15mins until light golden. Cool.

Ginger Crisps
1/2 lb butter(250 grams)
12 Oz flour (375 grams)
1 tsp ginger
1 tsp baking powder
6 oz brown sugar(175 grams butter)
6 oz sultanas or raisins(I use raisins)(175 grams butter)
1 good tbsp golden syrup
Method:Cream butter and sugar and add golden syrup and rest of
ingredients and mix well.Roll into balls and flatten.Bake 350 oc (180 degrees) for 15 minutes

copied from earlier thread GINGER CRUNCH - Cream together: 125gms butter, 1/2 cup sugar, 1 tbsp golden syrup. Add 1 egg, 1 & 1/2 cups flour, 2 weetbix-crushed, 2 tsp ginger, 1 tsp baking powder. Mix well, press into tin & bake 180*C approx 30 minutes. Icing: 75 gms butter, 1 cup icing sugar, 2 tbsp golden syrup, 1 tbsp ginger. Warm mix in pot, stir until smooth. Pour over hot base when comes out of oven.
