3 over ripe bananas any recipes?

justdelite, are you interested in making banana cake, loaf, muffins or a dessert? I have recipes that use bananas in all of those with the dessert options that I can offer you being a steamed banana pud or sponge topped pudding that is apple topped with a banana spongey topping plus... . . did you realize that if you don't want/need to use any or all of those bananas right now that they freeze really well and are just as good, if not better, for baking after being frozen and they come already packaged for the freezer - just pop them in as they are - in a bag or container if you wish, but left in their skins.

justdelite, here's the banana loaf recipe I've been using for years... . .

BANANA LOAF / CAKE - this recipe is for a loaf but it is so cake-like that it could be iced and served as a cake – it’s also good if cut into serving-sized portions, placed in dessert bowls, topped with either vanilla or chocolate custard and then warmed through in the microwave and served as a dessert. It freezes really well too.
115g butter
1 cup sugar
1-2 beaten eggs (I always use 2)
1½ cups flour
½ tsp baking powder
4 tbsp (¼ cup) milk
1 tsp baking soda
2 mashed bananas

Cream the butter and sugar, add the eggs and mix well. Add the flour and baking powder, and mix very briefly. Bring the milk just to the boil (easiest done in a coffee mug in the microwave), then add in and stir the baking soda to dissolve it. Add the frothy mixture to the loaf mixture and stir it in. Lastly stir in the bananas. Put the mixture into a greased and base baking-paper lined loaf tin.
Bake at 180°C for about 1 hour.

Gluten-free, wheat-free totally delicious breakfast bread
1/4 cup honey (optional, omit if you want to keep carbs even lower)
3 large eggs
3 mashed ripe bananas
1/2 tsp baking soda
1/4 tsp salt
1/2 cup any chopped dried fruit or chopped walnuts (optional)
3 cups Almond flour (to reduce costs i used a combination of 1 and a 1/2 cups almond flour, 3/4 cup ground sunflower seeds and3/4 cup finely desiccated coconut)
Cinnamon (optional)
Heat oven to 180 degrees c. Grease loaf tin and line bottom of tin with greased wax paper.
Mix together wet ingredients. Mix together dry ingredients. Gently combine. Pour into the tin. Bake for 3/4 to 1 hour. Test with a skewer. Turn out onto rack and remove wax paper while warm.

i always have a supply in the freezer. Just freeze then in their skins. I thaw them out and have the makings for loaf, muffins or cake ready to go!

I always and prefer to add an extra banana in my cakes, I avoid eating cakes that don't have enough.
