Banana Fritters Servings: 4 Ingredients: 3 Bananas; very ripe 1 Egg 1/2 ts Baking powder 1 tb Sugar 3 tb Flour Instructions: Mash bananas to a pulp. Beat egg and sugar together; add bananas, then flour. Fry in hot lard, dropping by spoonfuls in hot frying pan; sprinkle with granulated sugar and serve.Enjoy!
Gosh you set me off now......we love them too....will make some here tomorrow too.I always keep a stash of ripe bananas in the freezer for making banana cake, loaf or muffins.

OMG!!!!These are served with Butterscotch Sauce Banana fritters with butterscotch sauce Minka Firth Ingredients Butterscotch sauce 60g butter 1/3 cup golden syrup 1/3 cup soft brown sugar ¼ cup caster sugar 2/3 cup cream ½ tsp vanilla essence
Batter 1 cup self-raising flour 1 egg, beaten ¾ cup soda water 20g butter, melted
To finish Oil for deep-frying 4 firm bananas Icing sugar, for dusting Ice cream

Serving size: Serves 4 Cooking time: Less than 30 minutes Method Make sauce first. Place butter, golden syrup, brown sugar and caster sugar in a saucepan. Stir over low heat until sugar has dissolved. Increase the heat slightly and simmer for 3-5 minutes. Remove pan from heat and stir in cream and vanilla.
For batter, place flour in a bowl and make a well in the centre. Whisk in egg and soda water until smooth. Whisk in the melted butter. Fill a deep frying pan with oil and turn heat to high. Cut each banana into 3 pieces and, using tongs, dip pieces in the batter, turning them to coat well.
Using tongs or a slotted spoon, carefully lower a few battered banana pieces into the hot oil. (Do this in batches.) Cook for 2-3 minutes, or until batter is puffed and golden brown. Drain fritters on paper towels. Dust with icing sugar and serve with butterscotch sauce and ice cream.

oh ive tried them with the sauce at a local smorgasboard here in tauranga they are even yummyer with that thanks for that
