Thanks for those recipes.
Some people may not be able to tolerate buckwheat, it doesnt have gluten but is in the same family as rhubarb, and some people react badly to it.Watch the quinoa, it can be gluten contaminated.
Make sure you use the correct, gluten free:yeast, baking powder and cornflour (maize), these recipes are called gluten free but don't stipulate which of these particular ingredients are gluten free - for instance just putting cornflour isnt good enough, as most cornflour isnt gluten free its made from wheat!
Unfortunately a lot of recipes on the net such as these are lacking vital info so people need to take a bit of care there :)

hi herika you will be the person who may know if good old Napoleon brandy contains gluten

I have a recipe for a choc almond cake i want to try but it has brandy in it and as I'm a non drinker I wasn't sure if it contained any gluten

do you or anyone else know if it does or doesn't !

herika, Oct 10, 3:32am
Hi roxursox,
If brandy is made from fruit it is gluten free so the Napoleon brandy should be ok.Some places say brandy has no detectable gluten but if you react adversely to it you may need to avoid it unfortunately.
(Some people can't tolerate white wine because of the ingredients in the finings in the wine).
Hope this helps :)

Banoffee Pie
Ingredients-serves 6-8

Biscuit Base
100g/3½oz unsalted butter
250g/9oz gluten free/wheat free digestive biscuits, crushed
Caramel

175g/6oz butter
85g/3oz caster sugar
85g/3oz dark brown soft sugar
397g can sweetened condensed milk
4 small bananas
284ml carton double cream, lightly whipped
dark chocolate to decorate- keep in fridge
Method

In a large saucepan, melt 100g (3½oz) of the butter and stir in the crushed gluten free/wheat free biscuits. Press into the base and partly up the sides of a 19cm (7½in) loose-bottomed cake tin. Place in the fridge to chill while preparing the caramel.
To make the caramel, place the butter and the sugars in a non-stick saucepan over a low heat, stirring until the butter melts and the sugar dissolves. Add the condensed milk and, stirring continuously, bring gently to the boil, to make a smooth, golden caramel. Spread the caramel over the biscuit base and chill for about 1½ hours.
Slice the bananas and mix most of them with the whipped cream and spread over the caramel. Decorate with the remaining bananas and decorate with grated chocolate.

If someone who doesn't have a diagnosed reason for a gluten free diet but thinks that it might help with some discomforts felt, then adopts a gluten free diet, what changes would they experience!

Depends on their symptoms.if they were constipated it may help there, for others who suffer diarrhoea going GF may fix that.It could help with skin conditions and other things as well.Hope this helps.:)

Xmas is nearly here.to make a gluten free pavlova substitute the ordinary cornflour for gf maize corn flour (buy Bin Inn) and use cider vinegar instead of malt vinegar :)

"Even Coeliacs have to be very careful: 'A breadcrumb won't hurt someone with coeliac disease'.MYTH.
Even very small amounts of gluten can be toxic to people with coeliac disease. Taking sensible steps to avoid cross contamination with gluten is therefore important.

Top tips include:
keep cooking utensils separate during food preparation and cooking, avoid frying food in the same oil that has previously been used to cook gluten containing foods, use a clean grill, separate toaster or toaster bags to make gluten-free toast, use separate breadboards and wash surfaces thoroughly". All this information was taken from the NZ Coeliac Society website :)

At last I have found a hot night time drink I can tolerate:Trade Aid drinking chocolate. Its just cocoa with sugar added, but I have been trialling it for the last few weeks and I havent reacted badly to it (like I do to ordinary Cocoa) so thought Id post incase any one else would like to try it :)

roxursox, Nov 7, 8:06pm
thanks herika for that reply

I had completely forgotten about checking back in here till today

Do you make a GF xmas cake using brandy !

If so what type/brand of brandy do you use !

I have just a smidgen of brandy left in my bottle that's been in the cupboard for what seems like 100 yrs, don't spose it ever goes off lol

roxursox, Nov 7, 8:12pm
excellent I might try it cos they only thing I can drink is hot water and I'm a tad sick of that as you can imagine

I can tolerate the ocassional decaf capaccino but only from cafes that have decaf that's been decaffeinated using the swiss water method

you can imagine them rolling their eyes when I quizz them on what kind of decaf they have lol

herika, Nov 8, 1:36am
Hi roxurxsox,
No, I dont make a Xmas cake and dont have any brandy in the cupboard.I dont think Brandy would go off :)

herika, Nov 8, 1:39am
Hi again,
Have you tried freeze dried coffee!I buy the Robert Harris brand and have had no adverse reaction to it. The Trade Aid brand in the white tin is good too (oh - dont know if its decaf tho).

roxursox, Nov 8, 7:08am
I can only have decaf as caffeine reacts badly in my body

I'll have to go scour our local trade aid shop and see what they have

thanks for all your help

kaylfrazer, Nov 8, 8:41am
hi. I intermittently cook for visiting family members who are either coeliac or low gluten so am always looking for recipes that use everyday ingredients. When I see something on the internet I like the look of, I add it to my Pinterest page. If anyone is interested it is athttp://pinterest.com/kaylfrazer/gluten-free-recipes/. just check the ingredients carefully as some may below gluten rather than gluten free

herika, Nov 10, 7:47pm
Good luck, lets know how you get on :)

herika, Nov 10, 7:53pm
Hi, thanks for that, yes unfortunately a lot of websites have unreliable recipes etc on them and avoiding all gluten is paramount.
See post #271 above regarding what the Coeliac website has to say aboutlow gluten.

herika, Nov 10, 8:10pm
I made a chicken chop suey for tea last night using Braggs All Purpose Seasoning in place of the soy sauce, and used maize corn flour as thickening and it was delicious!I can highly recommend the Braggs Seasoning.
It only contains soybeans and purified water, nothing else, no alcohol and not fermented, no preservatives, additives, colouring agents or chemicals.
It tastes and is just like ordinary soy sauce but totally safe and gluten free!

kaylfrazer, Nov 14, 8:17am
Hi Herika. I do understand that coeliacs cannot have any gluten. if you read my message you will see that as well as cooking for a coeliac I also cook for a low glutenperson (not a coeliac).that was why I suggested that people first check the ingredients;. it isn't too difficult to work out which recipes are which.

herika, Nov 15, 7:26pm
Hi kay,
Thanks for that.We do need to be careful, esp people who are new to being gluten free as they may not realise that is why I commented the way I did. Also there are so many additives put into food, gluten free foods included, we need to make sure we check ingredients often as manufacturers can change them - Ive been caught out that way a few times.

herika, Nov 15, 7:27pm
Hi, Im wondering how you got on!They sell it in the packet and smaller bags too :)
