Hi chrisynz, when I first altered my diet (in my mid 20's) I cut out meat, then gluten, and then cows milk.I was still having probs, did research and found out I couldnt have vege gums or anything classed as a gum so cut anything with that in it out too.I also didnt eat any type of baking for years, as well as tomatoes, nuts, and all sorts of things. I was basically a very conservative vegetarian.It wasnt very easy to do, and at times I really dispared, but it was what I had to do to get my system well again.
I get my bread from Bakers Beyond.I get them to toast slice it and when I get home I freeze it.I use it straight from frozen and toast it in the toaster or make toasted sandwiches in the sandwich press :)

Hi poce, I guess you could substitute them with celery and carrot sticks with GF hummus or some of the suggestions I gave in my post above.I actually went without any baking for years and the positive thing, apart from not reacting badly to it, was I kept a very good figure.You seem to have your diet pretty much worked out but you may still get some tips from this thread.Thanks for your input :)

Thanks for the info have found the thread interesting. As i said earleir I cant eat raw veg. if I touch a raw carrot that will have ruined my whole day, I come out in very itchie red welts.

Here are a couple of hints: bean flours arent so good for baking as they are heavy and can cause it to collapse.
When making biscuits place mixture on baking paper on tray and leave on the tray for a few minutes after cooking, then transfer to a wire rack to finish cooling :)

Omigosh - have discovered something so simple yet so easy and yummy and had to find a gluten free thread to share!Forgive me if already posted!
I'm not into deep fried foods or anything, but if you ever feel like a quick banana fritter kind of dessert, then simply cut a banana in half then length wise.Wrap in a rice paper sheet and cook both sides quickly in hot oil.Reminds me of those mcdonalds turnover things with the crispy outside.Serve with whipped coconut cream for dairy free or icecream.Enjoy!

Cooking oi should be ok.Raspberry jam - check the ingredients listed, we use Anatoth (sp?) brand. Cocoa is said to be GF but I react to it.There is something in the cocoa that some people react to.Sorry I cant be of more help there.

Hi im just starting out on this ceilac way of life in reguards to my daughter.She has been diagnosied with ceilac's and is having a biopsy next week.What im wondering is about contamination.Ive read on here different people using products from bakeries etc.I wonder how it is possible to make gluten free products in such an environment.Is it possible?Also butcherys.Do they have certain areas where they add the flavourings and breadcrumbs and not the rest of counters.Am i over thinking?I have started stocking up on some products and utensils , frypan etc that is just for daughters use and want to have a good understanding before we go gf and as she is seven also dont want her to feel to 'left out ' from everyone else though also want to stress to her that she has to be completly gf for the rest of her life.I know some people allow their child to have the odd gluten treat but i dontthink that is the answer as the child could get used to that idea and do it for the rest of their life.My daughters symptoms are bloating, gas, sore stumochs and feeling sick.When i took her to the doc he told me that he didnt think the blood tests would show anything up but would do them to rule out gluten intolerance and ceilac's, then had to get us back in to tell me she had ceilac's.
Does the biopsy give any other ideas of any other intollerances to other foods?

I own a gluten free cafe the goodness of food in carterton. Everything is gluten free. I now have doughnuts and they taste the same. I am a baker pastry chef by trade and also have coeliacs. Using gluten free is easy just use bakels pastry does pasta and the baking mix makes cakes and doughnuts and the flour makes scones slices. check out frillys gluten free on f book to find out more

Hi ,the biopsy is just to take a look at the state of the villi in the gut ,I don't believe that any observations are made regarding other intolerance's.Pack and Save do a good range of GF sausages and yes once on a GF diet it has to be followed religiously with no deviation

Stir fry type meals are great!By using different combinations of veges you can have a variety of meals.Serve with rice, rice stick noodles or GF pastas.Try using different herbs and spices for different flavours.Bragg's All Purpose Seasoning tastes delicious and is just like normal soy sauce but its GF, GMO free and has no additives or preservatives, alcohol or colourants, and you only need such a small amount to give extra taste to a meal :)

I know this is kinda off the topic....but sorta on it too.....we cook a meal at Ronald McDonald House a couple of times a year for the families that stay there while their children are in Starship, and at the last one we did a couple of weeks ago I had chocolate brownie for the dessert.I took along a gluten free for my husband and kids to eat after we had finished, and ended up sharing it with 2 little girls who sadly told me they couldn't have the regular one.What a buzz.Now next time I go I will be sure to take gf alternatives.
If anyone wants a great place to support the House takes home baking that they freeze for those who live in.Gluten free baking would be greatly appreciated.

Hi there, wats the best way I can make sure my child has a yummy and filling lunch at school without it containing gluten, dairy or egg??Also any ideas for breaky as gluten free cereals just don;t cut it. He just ends up tired, hungry and miserable.

How about carrot/celery sticks, more fresh fruit, dried apricots etc, and nuts.Cooking up brown rice and keeping it covered in the fridge is a good idea.I zap it in the microwave along with some fruit (tinned peaches (in juice not syrup) is my favourite, Goat Milk and sliced almonds, you could use the juice from the peaches instead of the milk and add any other fruit you chose.I find this very filling and holds me over till lunch time.I have a banana at afternoon tea time and this keeps me going until my evening meal.

Hey Guys Vogels have a new Gluten Free Loaf on the market ,I bought mine at New World ,and it is bloody good.It is as close to a real loaf as I have seen and not "cakey" like the Burgans loaf.Pretty expensive at $8 but us coeliacs have got to eat hey

Hi, The way I found out what I could and couldnt eat (tolerate) was to go on a bland diet and once I wasnt having any adverse symptoms to introduce foods one at a time, wait a week and if I didnt have a bad reaction I would know that I was ok with that particular food.
The things that affect me the most are gluten, cows milk and products, vege gums (cause diarrhoea) and any product that has any type of gum in it (seaweed products etc).A lot of packaged GF foods are full of additives, and most have vege gums in them so I dont eat very much of that sort of thing at all but there are some good products on the market that dont have all those ingredients. You would be surprised at the things that have cows milk or products (lactose or casein) in them. (Cows milk gives me pain where gluten doesnt).
I will bump up another thread I started, about being a non-coeliac gluten intolerant person as it has the information you need to know about the blood tests (which are very important) and hopefully other information which will help you.The first couple of pages of this thread have a lot of good info too.

Also regarding your contamination question.I have a really definate, obvious and quite severe reaction so if I do have a bad reaction after eating something from a certain place I try to find out if its a question of "hidden" gluten that maybe the owner doesnt know about or a contamination problem.
Some times I just have to find somewhere I can buy food from ( eg takeaways) where I dont have a bad reaction.It came down to trial and error for me.

Gluten Free Coconut and Orange Waffles
Chef: Jacob Brown as heard on Afternoons Friday 16 September 2011

Tags: gluten free, orange, coconut, waffles

Ingredients
150gms brown rice flour
50 gms tapioca flour
50 gms buckwheat flour
200 gms coconut milk
50 mls water
1& 1/2 tsp yeast
rind of 1 orange
70 gms egg white
1/2 tsp salt
2 Tbs brown sugar
1/2 tsp baking soda
1/2 tsp baking powder
Method
Mix brown rice flour, tapioca flour, buck wheat flour, coconut milk, water and yeast together ( should be the consistency of cream). Adjust if necessary. Leave this mix in a warm place for 4-6 hours. This is called a pre-ferment.

In a blender or with an electric mixer, combine the preferment andthe rest of the ingredients. Mix for 3-4 minutes or until light and frothy. Cook this mix in a waffle iron as per instructions.

Mixed Grain Gluten Free Bread

Ingredients
7gms yeast
250ml water
300gms buckwheat flour
130gms quinoa flour
130gms potato flour
2 tsp salt
2 tsp brown sugar
2 Tbs whole quinoa
1 Tbs linseed
3 Tbs cornflour
1 tsp fennel seeds
Method
Combine all ingredients, leave to rest for 30 minutes. Check consistency of batter - it should be the same as a cake batter adjust as necessary. Pour into oiled tin 20cm long by 10 cm wide, and leave to rise by 1/2 again. Then bake in a preheated oven at 200°C for 10 minutes, then lower the temperature to 170°C and cook for a further 45 minutes.
