My fave is chicken canneloni.
Finely chop the chicken and mix with blanched spinach, ricotta, toasted pinenuts and parmesan. Season well.
Fill canneloni tubes with it, cover with a good tomato sauce, either fresh or out of a jar.
Cover with tin foil and bake til tubes are soft. Remove foil, cover with cheese and grill until bubbly.
