What to do with leftover roast pork??

The same as with the pork roast.
Slice and use the gravy to heat it up in.

If there is no gravy - then fry onions, add mushrooms, garlic, herbs, some wine if you have and add the sliced pork - just heat - do not cook. You can add some cream if you like.

Serve with lots of mixed veges
or a mixed salad and roast potatoes
or mashed potatoes and red cabbage cooked with wine, apples, onions and cinnamon and cloves
or rice and a green salad ....
