My husband takes them to work the next day as a salad, Chop them up with a bit of mint jelly. hot or cold, there both yummy.

yeah I'd chop into bite size pieces then before serving just warm up a bit and toss with a homemade balsamic vinegar dressing

I mix them with some cottage cheese and salad greens to make a tasty lunch.

I always make extra gravy then chop up the roast vege and reheat with left over meat and gravy for a second night of roast dinner mmmm sometimes better than first night.
