You boil them. And remove meat and use in whatever dish you are making. Generally used for soup but you can use in other things. Boil long and slow.

I like to braise them in Chinese masterstock.Let me know if you would like a recipe.

i just cook them like a roast - ie baked slow in the oven-lots of nice crackling too.
