cardamom cake for earlier request Cream 185g butter & 3/4C firm packed brown sugar until light and fluffy. beat in 2 eggs one @ a time & until well combined. Stir in 1C SR flour. 2t ground cardamom.1/4C ground almonds.&1/2C milk combined with 1/2C golden syrup.then stir in another 1C Sraising flour. Pour into greased bundt pan(or ring tin).bake in mod oven for 50 mins. Stand 5min before turning on to wire rack to cool. Dust with sifted icing sugar before serving.

Wonderful cake recipes! What a great collection. Was wondering if anyone has tried brainmacs (Pamela's)Orange Yoghurt Cake, but using lemon and lemon juice instead of the orange juice!Thanks.

mels cake for No 50 & No 71 thanks Mel. it is great.
2 cups water, 3 cups castor sugar, 250g butter, one third cup cocoa - combine in saucepan.stir over med. heat without boiling until sugar dissolved.Simmer 5 minutes, cool 10 minutes. Mix in, with beater, 4 eggs, then 3 cups self raising flour and 1 teaspoon baking soda. I use the beater for those as well as the mixture is quite wet. beat until smooth. Pour into lined roasting dish - bake 45 minutes 160 degrees. check at 40 minutes. stand 10 minutes then turn onto wire rack. have made this often. once I added 200g dark chocolate to be melted in with water etc.also a small amount of extra flour. it was lovely but rich.

Layered Passionfruit torte 6 Eggs separated, ¾ cup icing sugar, ½ cup sugar, ½ teaspoon Vanilla essence, ½ cup cornflour, 1 ½ teaspoons baking powder and ¼ cup of plain flour. FILLING:- 1 tablespoon lemon juice, 1 tablespoon gelatine, pulp of 10 passionfruit, 500g cream cheese, 1 ½ cups sifted icing sugar, ¾ cup cream lightly whipped, ½ cup of cream extra whipped to stiff peaks, pulp of 2 passionfruit extra, ¼ cup roasted almonds or pistachios chopped. Preheat the oven to 180c. Lightly greased two shallow 23cm round cake tins and line the bases with baking paper. Place the egg whites in a large dry mixing bowl beat with electric beaters until stiff peaks form. Add the sugar gradually beating until all the sugar has dissolved and mixture is thick and glossy. Fold in the yolks and vanilla essence. Sift dry ingredients into the mixture and gently fold in until smooth. Spoon mixture evenly into the prepared tins.

Cont. Bake for 20 minutes or until the cakes shrink away from the sides of tins. Leave the cakes in the tins for 5 minutes before turning out onto wire racks to cool completely. To make the filling, combine the juice, gelatine and ½ cup of water in a small mixing bowl. Heat half ofthe passionfruit pulp in a small saucepan until it boils. Add the gelatine mixture and stir over medium heat until dissolved. Strain the mixture through a sieve and add to remaining passionfruit pulp. Leave to cool slightly. Beat the cream cheese and sugar with electric beaters until the mixture is smooth and creamy. Add the passionfruit mixture. Fold in the lightly whipped cream.

Cont.Final bit. To assemble the cake, cut each cake in half horizontally with a serrated knife. Place one layer on a serving plate and spread with one-fifth of filling, continue layering leaving enough filling to spread evenly over the top and side of the cake. Place extra whipped cream in a piping bag and pipe rosettes on top of the cake. Spread extra passionfruit pulp over top. Sprinkle the nuts over the rosettes. Refrigerate for several hours before serving. One can assemble cake 3 days prior but add the rosettes and pulp before serving. Hmm just needed to add to this great thread.

Chocolate Mud Cake.A very nice version 250g unsalted butter, 250g dark chocolate chopped, 2 tablespoons instant coffee powder, 150g self-raising flour, 150g plain flour, ½ teaspoon bicarbonate of soda, ½ cup cocoa powder, 2 ¼ cups castor sugar, 4 eggs lightly beaten, 2 tablespoons oil, ½ cup of buttermilk. ICING:- 150g unsalted butter and 150g dark chocolate chopped. Preheat the oven to 160c. lightly grease a deep 22cm round cake tin and line with baking paper making sure the paper around the side extends at least 5cm above the top edge. Put the butter, chocolate and coffee in a saucepan with ¾ cup hot water and stir over low heat until smooth, remove from the heat. Sift the flours, soda, and cocoa into a large mixing bowl. Stir in the sugar and make a well in the centre. Place the eggs, oil and buttermilk in a separate mixing bowl and mix until combined.

Cont. final bit. Pour into the dry ingredients and mix together with a whisk. Gradually add the chocolate mixture whisking well after each addition. Pour the mixture ( it will be quite wet) into the tin and bake for 1 ¾ hours. Test the centre with a skewer, the skewer may be slightly wetter than normal. Remove the cake from the oven. If the top looks raw, bake for another 5 – 10 minutes then remove from oven. Leave it in the tin until completely cold, then turn out and wrap in plastic wrap. For the icing, combine the butter and chocolate in a saucepan and stir over low heat until the butter and chocolate are melted. Remove and cool slightly. Pour over the cake and allow it to run down the side. If one uses a hollow centre cake tin, be wary that baking times are less perhaps by 20% but is more spectacular with the choc running inside as well. Cheers.
