I love copycat recipies. Ones that your local cafe/resturant has, that you can produce yourself, for only a fraction of the price! I couldn't find an existing thread.
+ Starbucks Maple Oat Nut Scones +
2 1/2 Cups Standard Flour 1/2 Cup of Rolled Oats (the whole ones, not the chopped porridge ones) 1 tbsp of Baking powder 1 tsp of cinnamon 1/2 tsp salt 4 tbsp butter 1/3 cup of pecans OR walnuts (they both taste the same to me) 1 large egg 2/3 cup of brown sugar 1/4 cup of whole milk (or half milk and half cream if you have it!) 3 tbsp of Maple Syrup (The real deal is soo much nicer, but imitations will work too!)
+ Method + Preheat oven to 190 Degrees
In a large bowl mix together flour, oats, baking powder, cinnamon, and salt. cut-in the cold butter into the oat mixture until butter is about the size of small peas or breadcrumbs. Stir in the chopped pecans.
Combine egg, brown sugar, milk, and the maple syrup in a medium bowl. Add the dry ingredients and blend with electric mixer until firm. Using your hands mix the dough until you can form it into a ball.
Pat dough out on a lightly floured surface until it is about 3cm thick. Shape the dough into a rectangle, and then use a pizza wheel or large knife to cut the dough into 6 triangles. Arrange dough triangles on a baking sheet and bake for 25 to 30 minutes or until scones begin to turn light brown on the edges.
Drizzle with maple icing (Optional) 1 cup powdered sugar 4 teaspoons whole milk 1/2 teaspoon maple extract or flavoring Mix ingredients till smooth

Coffee Walnut Slice from cafe at Tarras, on way to Queenstown
this is really delicious. Makes 24 pieces, though at the cafe they had them sliced into triangles that were about 2 cm thick
100g butter 1t vanilla essence 4t very strong coffee 1T golden syrup 1½C brown sugar 2 eggs, beaten 1C plain flour 1t BP 1C coarsely chopped walnuts 50g melted butter 1½ cups icing sugar
Preheat the oven to 160C. Beat butter, vanilla, 2T of the coffee, the golden syrup and sugar together until smooth. Add eggs and beat again. Fold in flour with baking powder and walnuts, then pour into lined sponge roll tin and bake for 30-35 minutes. To make the icing, beat butter, icing sugar and remaining coffee together until creamy. Ice when slice has cooled, sprinkling top with additional chopped walnuts if desired. Chill before slicing.

Bavarian Apple Cake - From "The Lemon Tree Cafe" in Lawrence, Otago
For the base, knead the first quantity of flour, sugar, butter and egg together. Roll out and line a greased 28cm tin. Spread the slivered almonds over.
Peel and core the apples and cut into eighths. Mix with sugar, cinnamon, raisins and lemon juice. Spread over the base.
Mix the custard powder with a little cold milk and heat the rest. Stir in and cook until thick. Pour over the apples.
Mix the streusel ingredients together and dot over the custard. Put in an oven preheated to 175degC and cook for an hour.

+ Starbucks Gingerbread Loaf (or cake, depending on the pan) +
1 1/2 cups all-purpose flour 2 teaspoons ground cinnamon 1 teaspoon ground cloves 2 1/4 teaspoons ginger 1 teaspoon salt 1/2 cup butter, softened 1 cup brown or white sugar (or half of each) 1 teaspoon orange extract, optional 1 cup applesauce 1 teaspoon baking soda
Preheat your oven to 175 degrees Celcius. Grease and flour a 9 inch square pan, or a loaf pan.
In a medium bowl, mix together flour, cinnamon, cloves, ginger, and salt. Then set aside.
In a large bowl, cream butter and sugar until fluffy. Stir in orange extract.
Mix baking soda into applesauce and stir into creamed butter mixture. Add flour mixture. Mix until smooth.
Pour batter into prepared loaf pan.
Bake at 175 degrees celcius for 40 to 50 minutes or until a toothpick inserted into center of cake comes out clean.
FROSTING: (optional) Beat cream cheese until fluffy. Beat in vanilla and orange extract. Slowly beat in confectioner’s sugar. Ice when cake is cool

Motueka Moorings Cafe Carrot Cake:
2 Cups of wholemeal Flour, 2 Cups of sugar, 2 tsp of Mixed spice 2 tsp Cinnamon, 2 tsp of Baking Soda, 1 Cup of Walnuts, 1/2 Cup of Pumpkin seeds, 1 Cup of Sultanas, 1 Cup of chopped up dried Apricots, 750gm Grated Carrots, 1 & 1/2 Cups oil, 4 eggs 2 tspn Vanilla.
Mix all the ingredients together except, (carrots, oil, eggs, vanilla) Add grated carrots, mix well. Whisk up 1 1/2 Cups oils with the 4 eggs, add the vanilla. Fold Carefully into the dry ingredients DO NOT OVER MIX Bake at 170c for up to 2 hours keep an eye on it. Don’t forget to line the tin, makes 1 very large cake.

there is a delicious vegetable frittata on the menu at Relish cafe in Waikanae.It has layers of pumpkin, spinach and feta and is quite high.Absolutely delicious, would love to know how its made and if anyone has something similar I could make

Yum!I just had this last night at Lonestar in Rotorua for my birthday meal - so light and the sauce is so well balanced with the juicy chicken! Will definately be trying to recreate this at home - thanks for the recipe!
Recipe organiser, Yipee just found a cool liitle program I have been trying to organise my computer files, so many down loaded recipes and all in different places. Always forget where I filed them So have spent the last few days trying to find something to use. This program annoyed me at first because you cant change the size of the interface but so simple to use and adapt categories to my personal needs. Even has a few really useful recipes preloaded on it. I just run it beside trademe window so I can copy and paste straight into it.
