Copycat Recipies - From your local cafe/resturant

I love copycat recipies. Ones that your local cafe/resturant has, that you can produce yourself, for only a fraction of the price! I couldn't find an existing thread.

+ Starbucks Maple Oat Nut Scones +

2 1/2 Cups Standard Flour
1/2 Cup of Rolled Oats (the whole ones, not the chopped porridge ones)
1 tbsp of Baking powder
1 tsp of cinnamon
1/2 tsp salt
4 tbsp butter
1/3 cup of pecans OR walnuts (they both taste the same to me)
1 large egg
2/3 cup of brown sugar
1/4 cup of whole milk (or half milk and half cream if you have it! )
3 tbsp of Maple Syrup (The real deal is soo much nicer, but imitations will work too! )

+ Method +
Preheat oven to 190 Degrees

In a large bowl mix together flour, oats, baking powder, cinnamon, and salt. cut-in the cold butter into the oat mixture until butter is about the size of small peas or breadcrumbs. Stir in the chopped pecans.

Combine egg, brown sugar, milk, and the maple syrup in a medium bowl. Add the dry ingredients and blend with electric mixer until firm. Using your hands mix the dough until you can form it into a ball.

Pat dough out on a lightly floured surface until it is about 3cm thick. Shape the dough into a rectangle, and then use a pizza wheel or large knife to cut the dough into 6 triangles. Arrange dough triangles on a baking sheet and bake for 25 to 30 minutes or until scones begin to turn light brown on the edges.

Drizzle with maple icing (Optional)
1 cup powdered sugar
4 teaspoons whole milk
1/2 teaspoon maple extract or flavoring
Mix ingredients till smooth

Coffee Walnut Slice from cafe at Tarras, on way to Queenstown

this is really delicious. Makes 24 pieces, though at the cafe they had them sliced into triangles that were about 2 cm thick

100g butter
1t vanilla essence
4t very strong coffee
1T golden syrup
1½C brown sugar
2 eggs, beaten
1C plain flour
1t BP
1C coarsely chopped walnuts
50g melted butter
1½ cups icing sugar

Preheat the oven to 160C. Beat butter, vanilla, 2T of the coffee, the golden syrup and sugar together until smooth. Add eggs and beat again. Fold in flour with baking powder and walnuts, then pour into lined sponge roll tin and bake for 30-35 minutes. To make the icing, beat butter, icing sugar and remaining coffee together until creamy. Ice when slice has cooled, sprinkling top with additional chopped walnuts if desired. Chill before slicing.

Bavarian Apple Cake - From "The Lemon Tree Cafe" in Lawrence, Otago

Base:
200g flour. 100g sugar. 100g butter. 1 egg. 50g almond slivers.

Topping:
15 medium-sized apples (Granny Smith or braeburn). 2 tsp cinnamon. 100g sugar. 100g raisins or sultanas. 2 Tbsp lemon juice.

Custard:
37g custard powder. 500ml milk.

Streusel topping:
100g butter, softened. 100g sugar. 100g flour.

For the base, knead the first quantity of flour, sugar, butter and egg together. Roll out and line a greased 28cm tin. Spread the slivered almonds over.

Peel and core the apples and cut into eighths. Mix with sugar, cinnamon, raisins and lemon juice. Spread over the base.

Mix the custard powder with a little cold milk and heat the rest. Stir in and cook until thick. Pour over the apples.

Mix the streusel ingredients together and dot over the custard. Put in an oven preheated to 175degC and cook for an hour.

+ Starbucks Gingerbread Loaf (or cake, depending on the pan) +

1 1/2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon ground cloves
2 1/4 teaspoons ginger
1 teaspoon salt
1/2 cup butter, softened
1 cup brown or white sugar (or half of each)
1 teaspoon orange extract, optional
1 cup applesauce
1 teaspoon baking soda

FROSTING
225g cream cheese, softened
1 teaspoon vanilla extract
1/2 teaspoon orange extract
2 1/2 cups icing sugar

Preheat your oven to 175 degrees Celcius. Grease and flour a 9 inch square pan, or a loaf pan.

In a medium bowl, mix together flour, cinnamon, cloves, ginger, and salt. Then set aside.

In a large bowl, cream butter and sugar until fluffy. Stir in orange extract.

Mix baking soda into applesauce and stir into creamed butter mixture. Add flour mixture. Mix until smooth.

Pour batter into prepared loaf pan.

Bake at 175 degrees celcius for 40 to 50 minutes or until a
toothpick inserted into center of cake comes out clean.

FROSTING: (optional)
Beat cream cheese until fluffy. Beat in vanilla and orange extract. Slowly beat in confectioner’s sugar. Ice when cake is cool

TAKAKA OATY GINGER CRUNCH from The Wholemeal Cafe, Takaka, Golden Bay

Melt:
150 gm butter
2 Tablespoons golden syrup (try to be precise - hold the spoon in boiling water before measuring golden syrup)
3/4 cup brown sugar

Mix together:
3/4 cup coconut
1 & 1/2 cups rolled oats
3/4 cup flour
1& 1/2 teaspoons baking powder
1& 1/2 teaspoons ground ginger

Combine wet & dry mixes

Press into 20 x 20 cm pan

Bake 180* Cfor 25 minutes

When cool, ice with:
4 Tbsp butter
8 Tbsp icing sugar
4 teaspoons golden syrup
2 teaspoons ground ginger
Heat, melt, beat and pour hot icing over cool base

Motueka Moorings Cafe Carrot Cake:

2 Cups of wholemeal Flour, 2 Cups of sugar, 2 tsp of Mixed spice 2 tsp Cinnamon, 2 tsp of Baking Soda, 1 Cup of Walnuts, 1/2 Cup of Pumpkin seeds, 1 Cup of Sultanas, 1 Cup of chopped up dried Apricots, 750gm Grated Carrots, 1 & 1/2 Cups oil, 4 eggs 2 tspn Vanilla.

Mix all the ingredients together except, (carrots, oil, eggs, vanilla) Add grated carrots, mix well. Whisk up 1 1/2 Cups oils with the 4 eggs, add the vanilla. Fold Carefully into the dry ingredients DO NOT OVER MIX Bake at 170c for up to 2 hours keep an eye on it. Don’t forget to line the tin, makes 1 very large cake.

l made the Motueka carrot cake using kumara and it was really nice and l put it in a 23cm tin and it was very high but took longer to cook so needs bigger tin IMO but it got gobbled up with lots of compliments

Does anybody know how to recreate the Chicken Canneloni from Jagz cafe in Invercargill?

I've tried to make it at home but can't get the same flavor or textures.

Im after a baked cheesecake recipe from the cafe next to the warehouse in whangaparoa sadly its from the owners about 4yrs ago. i managed to get their choccy cake but not the cheesecake recipe... its choc & vanilla swirl... . .

katalin, inyour coffee recipe do you mean coffee granules or do you make a cup of really strong coffee and use that... . . thanks. just love anything with coffee in it.

korbo - I may be wrong this time, but from experience I think it would be made coffee ... especially as half of it goes in the icing. Granules wouldn't dissolve properly with melted butter & icing sugar.

Arthur Barnetts Cafes Smoky Fish Pie

100g butter
4 tomatoes diced
2 large onions diced
1 cup mixed vegetables
1 tsp curry powder
salt and pepper to taste
2 dessertsp lemon pepper seasoning
1 cup flour
1. 5 litres milk
1x310g tin smoked fish drained and mashed
6 hard boiled eggs
4 cups mashed potato
1 cup grated cheese
chopped parsley
Serves 8-10
Melt butter in large pan and saute diced tomatoes, onions and mixed vegetables. Add curry powder, salt, pepper, and lemon pepper seasoning and stir. After about 5 mins add flour then gradually mix in the milk, stirring all the time till it comes to the boil. Add drained and mashed fish, and chopped hard boiled eggs. Put in a large baking dish and spoon or pipe mashed potato over the top. Sprinkle with grated cheese and chopped parsley. Cook 180degC for 45mins. Serve with crusty bread and green salad.

"Lonestar Dixie Chicken
Cut chicken into pieces and flour. Brown in oil. Add white wine. (1 kilo chicken = 200 mls white wine). Cook until wine is reduced by 1/2 Half cover chicken with chicken stock in pan and simmer gently for 2 minutes. Add cream to completely cover chicken and simmer. Add finely chopped parsley, 1/2 cup grated carrot, 1 cup corn. Add spring onions 2 minutes before serving. posted by fisher" :-))
