This is the stuffed mushroom recipe I used last Christmas Day (from the Foodtown magazine) .... they went down a real treat!!

Combine 200 grams ricotta, 2 tablespoons each chopped basil and parsley, 1/4 cup grated parmesan and 1/2 teaspoon grated lemon zest in a bowl.Season with salt and pepper.
Spray 12 small portobello mushrooms lightly with olive oil spray and place them stem side up in a baking dish.Top with the ricotta mixture and sprinkle with extra grated parmesan.Bake at 200C in a preheated oven for 10 - 15 minutes, or until golden.Place on a serving platter, sprinkle with rocket leaves and drizzle with extra virgin olive oil.
Makes 12.

babybears, your request re the Dutch Chicken meatballs. Google, Bitterballen, they can either be meat or chicken. Or google Kroketten, agan meat or chicken. They are standard food with chips in the Netherlands. yummy.
edited the name babybears.

Thank you for posting it again. I know this came out of the foodtown magazine when originally posted and I miss placed my copy. It tastes almost the same as the one they make at blossoms. I prefer not to put too much cinnamon in it.
