Stuffing It is best to alweays cook onion and garlic lightly before adding to your stuffing mic, thisimproves the dlavour and is better for the digestion. BASIC BREAD STUFFING:1 small onion, chopped, 1 stick celery, incl leaves, chopped;90g butter;1-2 tsp dried sage;1/2 tsp salt;freshly ground pepper;2 tbsp chopped parsley(optional)5 cups stale breadcrumbs;;water, milk or giblet broth. Saute onion and celery in butter until soft. Combine with sage, salt & pepper, crumbs and parsley. Add enough liquid to moisten slightly. Makes enough for two chickens or one turkey.

Mrs Sully's Marmalade Cut up 6 large Grapefruit, stand overnight in 9cups of water. Next day bring to boil. Boil well for approx 10mins. Add sugar and bring back to boil. Boil for approx 30-40 mins. Test for setting after 30mins. NOTES: 1) This recipe can be halved. 2) You can interchange the grapefruit for oranges, and or lemons, and or limes. or You can use a mix of all 4 but they must add up to the equivalent of the 6 grapefruit. 3) I often add chopped glace ginger to the recipe as well and a teaspoon of ground ginger.

oops Did I forget so sorry. Recipe for maramalade is 6lb (3kg) sugar, 6 large grapefruit and 9 cups water. Cheers and thanks for picking that up

What a great idea for a thread... . thanks a bunch brianmac ... kiwiscrapper checkout the molasses thread... you'll find a recipe for tigers milk (blurgh! but great for the skin)... we mix ours up in orange juice and you can also add a dash of flaxseed oil to it for extra blurgh.

Easy Beef or Chicken Curry Saute 1 onion in oil, add 1 1/2 tsp of curry powder or curry paste, I also add a little bit of coriander and cumin, 1/2 tsp each. Add 1 can chopped tomatoes including juice, and 500 g stewing or braising steak and cook on a gentle heat for 1 1/2 hrs. Remove lid and let about 1/2 the liquid in pan evaporate and thicken. Add 1 can of coconut cream, about 1/2 tsp salt (to suit) and shake of pepper, simmer further 15 minutes.
For chicken, leave out until tomato mixture has reduced and thickened, then add chicken breast cut into pieces.
