Easy Cheesy Lentils. From frances1266
1 onion, chpd 2T oil 1 cl garlic, chpd 225g split red lentils 750ml water 125g gr. cheese s&p Fry onion in large saucepan for 10 mins. Add garlic, lentils and water. Simmer 15-20 mins until lentils soft. Beat in cheese and add s&p. Also can cook as you would for mince but add brown lentils. e.g. cook diced onion, carrot, celery, add lentils and stock, 1t sugar, soy sauce and 1T tomato paste plus 1t mixed herbs. Cook for 30 min or so until lentils cooked. Add peas few mins before serving. Thicken and serve with rice or mashed potato and veg.

STUFFED BELL PEPPERS Stuffing:1 cup of softened burghal wheat, half cup chopped fresh parsley, feta cheese cut into small cubes, diced greek olives, chopped onion,half can of diced tomatoes, lots of crushed garlic to taste, three tablespoons olive oil.Combine all ingredients, fill the cleaned peppers (cut the top off close to the top and leave the stalk on) and wrap in tinfoil and bake in hot oven until soft to squeeze (about half hour) - very simple and really delicious!

lentils: by anglia I only use brown lentils
or the French variety. No need to soak them - just cook in a fry pan barely cover with water - they don't take too long, don't let them get mushy. I fry an onion, with garlic and curry type spices, add a can of chopped tomatoes, finely chopped apple, cubed potatoes and a handful of raisins. Towards the end when potatoes are nearly cooked and the drained lentils and s little brown sugar and a knob of butter. Non vegetarians like this recipe it is quite 'carby' though. You can also add some fresh baby spinach towards the end of cooking. Easy as pie, actually easier than pie!.

really easy &tasty falafels 1 tinned chickpeas, drained, 1 small red onion, chopped 2-3 cloves garlic,hand full of parsley & coriander, tbsp chili sauce, 2 tbsp flour, 1/4 tsp salt, 2 tsp cumin, 2tsp coriander. Place all ingredients into food processor and blend well, leave the mixture with a bit of texture. So easy and quick to make,
great with tatziki, hummus and salad in wraps.

-chilli served it with corn chips. i'm never using mince in a chilli again! this was better!

cont. METHOD: (1) Cut the “tender bits” into thin slices, keep the gravy.(2) Place slices, gravy, tomato puree, plum sauce and soy sauce in a large saucepan over medium heat for 10 mins or until liquid is slightly reduced. (3) Add oil to a wok or fry pan and stir fry the veges for 2-3 mins. Add the bean sprouts and heat through. (4) Place rice on the base of a serving platter. (5) place stir fry veges over the rice and arrange the tender bits sauce in the center. (6) sprinkle with sesame seeds.
