Hi winnie,
I use Cider Vinegar, it is gluten free. Some people say white vinegar is gluten free but I have reacted to it, rung the company and was told sometimes they arent sure of the grains used in the making of it.....are you asking for a GF thickener?I use either maize cornflour or arrowroot powder (the later saying on the packet it is good for Coeliacs...or words to that effect) hope this helps

I find because Im not buying a lot of the pre packaged gluten free foods its not so expensive for me. Apart from Braggs Seasoning and Melrose Worstershire sauce, and perhaps the odd packet of GF sausages I only buy rice and maize corn flour which arent expensive and rick stick noodles and GF pasta.
I found a lot of GF recipes have ingredients in that some gluten intolerant people cant have, such as vege gums, soy or starches. Often a gluten intolerant person also has other food intolerances and its this that complicates matters.
Also I found a lot of recipes in GF books did have suspect ingredients in, one being Vanilla Essence.
Hansells say theirs is GF when you ring but I rang and talked to the Lab. Technician and questioned her at length and in the end she had to admit that because the alcohol base used is imported they cant guarantee its 100% GF! So we do have to check these ingredients out with care.

Similar to this recipe I use: Very Yummy!
Chewy Almond Orange Biscuits (GF)

Ingredients:
2 cups ground almonds
1 cup Caster Sugar
finely grated rind of one orange
2 egg whites, beaten to soft peaks
1 heaped Tbsp Golden Syrup, warmed
Icing Sugar to dust

Directions:
Preheat oven to 160°C. Line 2 baking trays with baking paper. Dust this with icing sugar. Mix all ingredients to a thick paste. Sieve a layer of icing sugar onto the work surface and roll small balls of mixture in the icing sugar to coat well.
Press down on the trays leaving plenty of room to spread. (Biscuits just need to be pressed down slightly not flattened out with a fork as you do with other biscuits). Bake for 15 - 18 minutes then cool on a wire rack - store in an airtight container. Makes approx 20

Great recipe, thanks nzbadger.
Wee Note: make sure the icing sugar used is gluten free, some arent apparently, I buy the Chelsea brand and have no problems with that one.

Someone asked for a Banana Bread recipe:

In a large bowl cream 100gm margarine and 1 c sugar.
Beat in 2 eggs and 3 large very ripe bananas.
Sift in 2 cups rice flour and 2 tsp GF baking powder - stir to combine.
Than add 1 cup ground almonds and stir to mix. Bake in a greased loaf tin at 170 for about an hour 20 mins.
Note: the rice flour and baking powder can be substituted for 2 c GF baking mix - this makes a really nice firm loaf that can easily be sliced and buttered and is so easy make as it is all mixed in the one bowl.

There is a lot of "hidden gluten". It can be in the ingredients added to food such as MSG, HVP, "natural flavours" etc. The 1400 range are thickeners and are made from starch and could have gluten in them. If they are wheat based starches they will contain gluten. Another confusion is thickeners are sometimes called "modified starch" or "dextrins". Also some additives such as vege gums (guar gum etc) are laxatives and can cause diarrhoea (even small amounts of these additives can affect some people). There is a website called "Fed Up With Food Additives" that has info on additives etc that is very good.
