coffee is a diuretic and if you are not drinking water, you will have problems with constipation. Many a headache is caused by dehydration. The problem with not drinking water is that you lose the trigger for thirst. This will change once you start getting into the habit of drinking it. i was never much of a water drinker, but i find ite easier out of a sipper bottle. To start with, you may have to force yourself to drink it, but once your natural thirst kicks in, it will be much easier. Start with a glass in the morning, again at lunch and one before dinner and then increase it from there. In the warmer weather, you may find it easier, but also bear in mind just how much water your body excretes in a day through normal functions such as breathing!

Hmmm I know, gota have the coffee in the morning, yes, should drink more but do have the odd hot water, I dont seem to get headaches.
Any ideas on:- After having bread in the morning, whats an alternative to crackers all seem to have either soy or glutens added. Have been eating the rice waffers, but are high in carbo and have soy added.

lot less gluten free these days, and am annoyed how doctors are not picking it up, i wish the penny will drop for them , that their whole grain wonder health diet, may not even be safe for ducks, we are still in the dark ages im afraid, and bread is more toxic than smoking long term and also numbers consuming it, meds and grains is a usa dollar thing, till then... ...

Hinext-to-normal,
thank you for that info. I was really amazed when I first read about this sort of thing, but then when I researched it more and found out more I understood why a lot of things are the way they are :)

So true, thanks cookessentials :)

Hi chrisynz, when I first altered my diet (in my mid 20's) I cut out meat, then gluten, and then cows milk. I was still having probs, did research and found out I couldnt have vege gums or anything classed as a gum so cut anything with that in it out too. I also didnt eat any type of baking for years, as well as tomatoes, nuts, and all sorts of things. I was basically a very conservative vegetarian. It wasnt very easy to do, and at times I really dispared, but it was what I had to do to get my system well again.
I get my bread from Bakers Beyond. I get them to toast slice it and when I get home I freeze it. I use it straight from frozen and toast it in the toaster or make toasted sandwiches in the sandwich press :)

Hi poce, I guess you could substitute them with celery and carrot sticks with GF hummus or some of the suggestions I gave in my post above. I actually went without any baking for years and the positive thing, apart from not reacting badly to it, was I kept a very good figure. You seem to have your diet pretty much worked out but you may still get some tips from this thread. Thanks for your input :)

poce, Jun 28, 11:59pm
Thanks for the info have found the thread interesting. As i said earleir I cant eat raw veg. if I touch a raw carrot that will have ruined my whole day, I come out in very itchie red welts.

Here are a couple of hints: bean flours arent so good for baking as they are heavy and can cause it to collapse.
When making biscuits place mixture on baking paper on tray and leave on the tray for a few minutes after cooking, then transfer to a wire rack to finish cooling :)

poce, Jul 1, 8:08pm
Has any one tried the GF biscuits and cake mix cant remember who makes them. . any good?

herika, Jul 21, 9:16pm
There are a lot of different brands around. I dont use them because of the additives etc in them, but others do and find them ok :)

Stir fry type meals are great! By using different combinations of veges you can have a variety of meals. Serve with rice, rice stick noodles or GF pastas. Try using different herbs and spices for different flavours. Bragg's All Purpose Seasoning tastes delicious and is just like normal soy sauce but its GF, GMO free and has no additives or preservatives, alcohol or colourants, and you only need such a small amount to give extra taste to a meal :)

I know this is kinda off the topic... . but sorta on it too... . . we cook a meal at Ronald McDonald House a couple of times a year for the families that stay there while their children are in Starship, and at the last one we did a couple of weeks ago I had chocolate brownie for the dessert. I took along a gluten free for my husband and kids to eat after we had finished, and ended up sharing it with 2 little girls who sadly told me they couldn't have the regular one. What a buzz. Now next time I go I will be sure to take gf alternatives.
If anyone wants a great place to support the House takes home baking that they freeze for those who live in. Gluten free baking would be greatly appreciated.

Thats a great cause to support, will bump it up for you :)

Hi there, wats the best way I can make sure my child has a yummy and filling lunch at school without it containing gluten, dairy or egg? ? Also any ideas for breaky as gluten free cereals just don;t cut it. He just ends up tired, hungry and miserable.

herika, Aug 1, 8:21pm
hi felixt
How about carrot/celery sticks, more fresh fruit, dried apricots etc, and nuts. Cooking up brown rice and keeping it covered in the fridge is a good idea. I zap it in the microwave along with some fruit (tinned peaches (in juice not syrup) is my favourite, Goat Milk and sliced almonds, you could use the juice from the peaches instead of the milk and add any other fruit you chose. I find this very filling and holds me over till lunch time. I have a banana at afternoon tea time and this keeps me going until my evening meal.
Hope these ideas help :)

herika, Aug 10, 9:46pm
hi again felixt - I forgot to mention about the rice for breakfast that if you put it through the Whizz it comes out like porridge, which is great in the winter months :)

bumping for Friday evening :)

Something a little bit different to do with eggs for breakfast or lunch:mix how ever many eggs you need with some left over mashed spud, add some chopped fresh tarragon, dill, marjarom or parsley, pinch of salt, fresh ground black pepper and fry as pikelet size fritters :)

herika, Oct 26, 8:12pm
Hope everyone is enjoying the lovely weather.Fresh salads are great at this time of the year but watch out when having a barby at other places and keep your GF sausages separate from other meats esp marinated steak and chicken etc. :)

motorbo, Oct 26, 8:19pm
gosh thats tough its hard enough to be gluten free but no eggs ....i would be doing some reading on vegan recipes, find the ones that could work for you, and add meat or fish etc when you want. i know i like to have what i call my norty treats, i used to overcook basmati rice a wee bit so i could get it a bit glugey, so i didnt need an egg to bind it, i then would add my flavours and vege to pan fry small cakes - so one combo i do is green curry paste and grated courgette and copped spring onions. another was paprika abd grated carrot and courgette, so i would go for the flavours he likes, another i make it spring rolls, but i use rice paper rolls and fold to enclose them spray coat with oil and bake in oven to get the crispy.
