A couple of hints: bean flours arent so good for baking as they are heavy and can cause it to collapse. When making biscuits place mixture on baking paper on tray, and leave on the tray for a few minutes after cooking, then transfer to a wire rack to finish cooling.

Sauces can have the colour 150c in. I found these comments on the Coeliac.com website forum: 150c is sometimes made from wheat (in ice-cream), milk derivatives can possibly be found in caramel colour, made in the USA is generally ok but outside the USA it can contain gluten. Sometimes wheat in a product can be labelled as corn in the USA. So if you buy a product made in the USA and it has corn on the label be wary. There are so many products with misleading ingredients listed on the labels it pays to be careful and read each one.

A couple of products Hubbards have put out in their gluten free cereal range are Thank Goodness Cocoa Puffs and Thank Goodness Cornflakes. These are dairy and soy free. They do have additive 471 which can be corn starch or made from glycerin and fatty acids (animal fats). They also contain a warning saying they are processed on the same site as peanuts and nuts, but its good to see new GF products coming onto the market :)

Hi wizzbikz, potato flour and potato starch are not the same as far I know.I think the starch is more refined.Have you tried Bin Inn? Thanks for your comments :)

Hi motorbo, I use the rice noodles for anything and everything!I occassionally use the GF pasta but it is dearer.I love rice stick noodles and use them in place of pasta and rice :)

I just did a google search on "potato starch" and the first link says: Potato starch is made through an extensive process of washing, sometimes cooking, and then separating the starch present in potato cell walls so that it can be made into powdered or liquid form. In cooking, potato starch is often considered a substitute thickener for cornstarch or white flour. However, it has a higher heat point than cornstarch, so it may be superior for certain foods that require high temperatures. You’ll find many types of potato starch on the market, some in organic forms if you want to avoid pesticides. It is occasionally sold as starch flour or potato flour instead, but usually all names refer to the same starch. :)

Hi Herika, I think we have chatted in the past. Yet again my daughter is showing some concerning signs(though Dr's aren't as concerned as me) she has had quite bad constipation off and on since the beginning of the year, which has meant a lot of pain for her. I asked the last Dr I saw what foods to avoid and what foods to give her, and apart from 'no junk food' and a website, I was left with very little. She doesn't have much junk food, we don't have takeaways of any kind very often etc. She is a big eater of fruit, her favourites being apple and prunes. So I'm thinking of looking at doing an elimination diet, yet again, to see if it makes a difference, so would really appreciate any advice you can give me.

flick1. Normally I wouldn't recommend Healthy Food Guide - the magazine, because most of their healthy food recommendations fly in the face of science and tend to stick to the PC line. However, this month there is a brilliant little article called something like, Gluten Myths... Had a quick squizz at it whilst standing in checkout queue and it has some excellent information on other foods that gluten intolerant people could also be allergic too.
Was a real eye opener and oddly enough, seemed to tally with what herika has been saying all along in some areas. I suggest you splurge $5.50 and buy it for this month at least.

hi flick1, I have heard this happening to other people too.I dont know why it happens.I know cheese can cause constipation - mostly the hard cheeses.Fibrous foods help:rhubarb, beans, corn, figs, kiwifruit, dates, plenty of dark greens etc.Im sorry I dont have much time over the next couple of days to research this for you but google may give you some ideas or maybe someone else can shed some light on this. A hint I read somewhere recently was to prepare a Rice Paper sheet as normal and wrap fish, onion, herbs, veges etc in it and bake in the oven. Sounds really yummy so Im going to try it next time we have fish :)

Please be aware that vanilla essence may not be gluten free.I will repeat the info here that I post from time to time, to keep people informed: Hansells say theirs is GF but cant 100% guarantee it because the alcohol base used in the essence is imported and may contain gluten containing grain.Its best to use pure vanilla essence to be on the safe side :)

flick1 I have received an email back from Spring Hill Farm giving me the ingredients in their bread : "potato starch, maize starch, pea prtotein, psyllium and flaxseed". As psyllium and flaxseed can act like laxatives you might like to try this bread for your daughter. Here is the contact email addy for them: [email protected] When I emailed them I asked for the bread mix ingredients and in the reply it says: "Thanks for your enquiry.The ingredients in the real bread are...." and then lists the above, so Im not quite sure what the real bread is but if you email them you could ask for more details :)

Tip for today:If you have other sensitivities as well as being intolerant to gluten remember that some people may only be intolerant to gluten and if they suggest you can have this...or that...be careful and still check it out incase there is something in there you cant have. I used to get caught out like this but now I realise some people are only intolerant to gluten and they can have a lot of foods I cant. Also a lot of people still just dont understand about "hidden gluten" and that gluten can be in products even if its supposed to be listed on the label (and isnt).

Try using unsweetened apple sauce instead of oil in recipes.It help keeps it moist and hold together better. Cakes can come out a bit heavier but are still yummy :)
