Onion Marmalade 4 onions sliced thinly 4 Tablespoons brown sugar 1 tablespoons mustard seeds 1/2 cup water 1/2 balsamic vinegar 1/2 teas salt 2 tablespoons fresh rosemary simmer gently till moisture evaporates I have lately cutting down on the sugar content
or 3 med onions slice 2 cloves garlic 2-3 bay leaves sprig of fresh rosemary 3-4 cloves whole 1 stick of cinnamon 1 c water 1/4 brown sugar 2-4 T balsamic vinegar mix together everything except sugar and balsamic vinegar
Boil 30min until the water has evaporated stir in sugar and vinegar cooking gently till evaporated
remove bay leaves rosemary, cloves, and cinnamon stick
I don't know how long you want them to last, I have never had any go off
I usually make the first one, so easy

Thanks for sharing your recipes, much appreciated. Is that ½ cup balsamic vinegar in the first recipe as it just says ½?

sorry yes 1/2 cup. I finally did the 2nd recipe today, came out very sweet and lots of flavor. only got a promite jar full,

Thanks slimgym, will give both the recipes a go. Love onion marmalade and it's quite expensive to buy for a small jar.
