Cucumber Relish. 2 lb Apples peeled and grated 3 lb onions cut in half and sliced 2 lb sugar 3 lb Cucumber grated (seeds and all I do skin of telegraph aswell but peel normal ones) 1 heaped tsp pepper salt to taste 4 Cup Vinegar 1 dsp curry powder 1 TBSP Turmeric
cook apple in vinegar when cooked add sugar, pepper, salt and slice onion, cook till onion is soft. add grated cucumber and boil 5 min, add curry and Turmeric. Thicken with flour and put into jars.

Tomato and pineapple relish
I grew some dark tomatoes this year, they are so soft to eat but did make outstanding relish.
3 kg of ripe tomatoes, cored and chopped smallish 1250 grams of chopped onions 4 seeded chili chopped [ not the very hot ones ] 3 green capsicum chopped [seeded] layer in a stainless steel bowl with a sprinkle of plain salt over each layer, leave 4 hours, and strain.
Put the veg into a preserving pan with 4 cups of malt vinegar 750 grams of brown sugar 3 tsp mustard seeds 3 tsp celery seeds 1 & 1/2 Tablespoons of curry powder 1 & 1/2 Tablespoons of turmeric 1 Tablespoon of plain salt
Bring it to a boil and then simmer until the vegetables are cooked, and reduced down by a 1/4 Add a 425 gram can of crushed pineapple, with the juice
Thicken with 6 Tbsp of cornflour 1 cup cup of malt vinegar I thought this recipe a little loose a bit more cornflour for me, my husband likes it as is. Don't you hat that.
***I see another recipe with pineapple further up, must try that and the telegraph cucumber recipe thanks. I grew heaps in my glasshouse but gee when they are done producing, its over.

Someone queried the spice content of plum sauce, our one doesn't have either apples or plums although I put 3 apples in the last lot, forgot the ginger but put the allspice! It is yum!

Apple sauce. Monty's Surprise, has to be the nicest apples for making Applesauce . The apples are huge and are snowy white when cooked
I have a young tree with 1 very large apple on it, can't wait to try it, first time it fruited. Supposed to have the best antioxidant properties of all the different types of apples according to my sister in law.

My tree has been in for two years. katalin2. We had to prop up the branches to stop them breaking under the weight of the fruit. We lost three apples to the wind and size. I cooked those. They tend to grow three fruit together.

plum sauce. [hot]
6 kg of the plums , 3 liters of vinegar , 1 1/2 kg of brown sugar , 1/4 cup of sea salt , 100 grams of fresh ginger skin on and chopped , 4 good Tblsp crushed garlic , 2 tsp ground mace , or nutmeg 1 tsp cayenne , cut down to 1/2 teaspoon if you want a mild sauce. 5 tsp gr. all spice , 1 Tblsp whole cloves , 1 tsp gr. cloves , 2 tsp gr, ginger , simmered that untill half the volume , approx 4 hours. put it through a mouli , then sieve the stones to get all the flesh , makes it thicker.

Pickles Worcestershire sauce. I put the pulp into a few jars and used it as chutney. We used it all.
Finished recipe. 9 X 750ml bottles.
8 liters of malt vinegar , 25 grams of whole cloves 2 kg apples , leave skins on just chop the fruit. 2 oranges , leave skins on just chop the fruit. 2 lemons , leave skins on just chop the fruit. 500 grams of garlic , 500 grams of fresh ginger , 110 grams of tamarind puree , 1 near rotten banana, remove the skin. 500 grams of molasses , 25 grams of gr. black pepper , 3 tsp cayenne pepper , 1 kg brown sugar , 225 grams of sea salt. Simmer for three hours , strain through a sieve , then hang the pulp in a cotton cloth to extract all the sauce. watch for fruit flies. Bottle , cork , and store in a cool place.

Hot Chili sauce.
2 cups of white vinegar 2 teaspoons of sea salt 100 grams of halved Habanero, Red Savina, chili.
Simmer until the chili are soft, and the liquid reduced by half, there abouts Pour all into a narrow necked glass jug and blend using a stick blender to break down all the seeds, etc 1 and 1/4 cups of sauce Mature it in the fridge for 3 months, before using. Lasts very well.

"Tamarind sauce"
2 liters of malt vinegar , 110 grams of tamarind pulp , 1 Tbsp of sea salt , 1 cup of brown sugar , 700 grams onions , 10 grams of whole pickling spice , 1/4 tsp mace , 2 whole chili peppers , 1 tsp each whole black pepper corns and 1 tsp curry powder. Simmer all together for 1 hour, strain, bottle , cork and mature. Has a Citrus flavour.[ tamarind] This did turn out very well. I could very well be tempted to make this again. It is keeping very well.

Worcestershire Sauce.
Yielded 4 X 330ml bottles of sauce. robman7 (292 )
This is nice and easy. A good amount, when you have to buy, the vinegar.
Combine all ingredients in a saucepan, bring to the boil and cook gently uncovered for 20 minutes. Cover and let it stand overnight.
Next day strain and bottle, ready for use immediately but shake bottle before using. I decided to put this in here, for easy access. It is maturing well. I will make it again, when I have to buy vinegar.

Plum Sauce . [ yellow fleshed plums ] Yield 6 X 750 mil wine bottles of sauce.
Put everything into a preserving pan 3.5 kg of plums. 3 litres of vinegar [ cider or malt ] 3 cm grated fresh ginger 1 kg of brown sugar 2 Tbsp sea salt 2 tsp gr. mace 1 tsp cayenne pepper 2 tsp gr. cloves 5 tsp gr allspice
Simmer for 1&1/2 hours,
Pick the stones out as they rise, it is way easier when you put the pulp through the mouli. I sometimes count the plums before I start, so I can retrieve all the stones, the mouli just hates them. Bottle while hot, cork when cold.

Mixed Vegetable Pickle
Cook
2 & 1/2kg of mixed vegetables, in 2 liters of water and 250 grams of plain salt. strain well, add
4 cups of vinegar 3 cups of sugar, bring to the boil thicken with 1 cup of flour 1 Tbsp of dry mustard 1 Tbsp of curry powder, 1Tbsp of turmeric mixed with 1 cup of vinegar
cook for 5 minutes Bottle while hot, put the lids on when it is cold.

Pickled Lemons
Lemons Sea salt Glass jars with plastic lids
Wash the lemons well Cut almost through from the stem end Turn the lemon over and give a half turn Cut near through from the blossom end Put a teaspoon of sea salt into each end Put the lemon into the jar, do this to each lemon filling the jar. I filled 3 jars, condensing them down to 2 as the lemons shrunk. I left mine for 2 months before starting to use them. So very nice in many things, and a great way to use up lemons from your tree.

Whole egg mayonnaise 1 whole egg juice of 1 lemon 1 teaspoon whole grain mustard 1/2 teaspoon salt 1/4 teaspoon ground black pepper 150 mils of sunflower oil 150 mils of canola oil
You will need a stick blender and a tall beaker to make this mayonnaise. Put the egg into the beaker first Put the other ingredients carefully on top of the egg, so as not to disturb the egg.
Lower the stick blender in to the bottom without disturbing the ingredients.
Pulse the blender, until the ingredients start to emulsify, tilt the blender to allow the oil to be incorporated.
If it splits, don't throw it out. start over, Once you have the new lot emulsifying, add the split mayo in 3 lots.
Tartare sauce 1 cup of mayonnaise 1 tablespoon capers chopped; 1 tablespoon of gherkins chopped, 1 tablespoon of parsley chopped. Chill
Bluffed sauce 1/4 cup of Tartare sauce 3 chopped raw bluff oysters a little chopped chili
I give this a fast burst in the microwave, as all microwaves are different, start with 30 seconds. You are just cooking them. Pour over a nice rare steak.

Nan’s Cucumber relish 1lb apples (455g) 1lb onions (455g) 1 pint vinegar 1 t cayenne pepper 2 medium peeled cucumber 2oz salt (60g) 1⁄2 lb sugar (250g) Cut up apples. Cook in vinegar until soft. Add sugar, salt & pepper & boil for a few minutes. Cool. Mince cucumber & onion, strain juice. Add to apple mixture when cooled. Mix & Seal in jars.
