Ideas featuring whipped egg whites have probably been with us since the first thrifty housewife (or house husband to be 100% PC) made something using only the yolk of an egg or eggs and didn't like the idea of wasting the balance of the chooks efforts. And given that domestic poultry wouldn't have arrived in NZ or Australia till the Europeans did that puts us Down Under folk a little behind the starting gate. But. shhhh. don't tell anyone. Definitely a Kiwi thing as we all know. If we can't lay claim to inventing the pav we can at least hold our heads high in the knowledge that no other country has managed to raise he humble concoction of glossy peaked egg whites and sugar to such heights as us.
