could anyone tell me if you can buy sausage meat from the supermarkets that isn't too fatty. I made some sauaage rolls the other day and, although they were really yummy I found that the meat was a bit too fatty.

You could buy good quality sausages and squeeze the meat out of the casing.

+ 1 .that's the only way to ensure the sausage meat is not too fatty - or fatty at all; some good quality sausages are made from very lean meat.eg. Veal Bratwurst (PURE veal - no fat, no preservatives, no additives).

Or you could simply use minced meat, herbs, spices and eggs - and some crumbs if you want it smoother.

I like the Hellers sausage meat too. Didn't find it too fatty and there were no nasty gristly bits either.
