What is the best way to prepare kumara etc for the freezer for roasting Xmas day!

I'd peel them, cut them into roast size pieces (not tiny) and freeze it raw, but I couldn't guarantee how good they would be on the day.
What do you mean by etc!

umm kumara is available all year round.why use frozen! infact all roasting veges bar yams.

Freezer! nah, they'll go mushy, use fresh.

I throw yams in the freezer, and then add them to the roasting pan still frozen, cos otherwise they cook too fast and go mushy.This way they are ready at the same time as my other veges eg kumara, potatoes, pumpkin.
