Sponge fingers for tiramasu-have you seen any ?

Cant find any in West Auckland.Tried Pak N Save Lincoln Rd, Countdown in Henderson mall and Gilmours Henderson.Gilmours say that Unibic have discontinued manufacturing this item.Has anyone seen any lately!What would be a good substitute for this!I needed to make Tiramasu tomorrow and now am left high and dry without the sponge fingers.

I've only ever found them at New World but I had heard they were being discontinued - alternatively look in a specialised/mediterranean deli.You could use the normal trifle sponge they sell in the supermarket though - homemade sponge would be too soft I think.

Home made sponge cake is actually better as it contains a lot more egg and has a firmer texture than commercial sponge cake.

Mine aren't - light as air, and definitely too soft to use in anything like tiramisu or trifle unless you let it go stale.Sponge fingers and trifle sponge are hard and crunchy by comparison with actual sponge "cake".

If you google Ladyfingers or Savoiardi there are quite a few recipes around - although they are fat free like traditional sponge I think the difference is in the cooking method so they go hard enough to be dipped

You can make your own.ladyfingers by piping them .much much cheaper and easy.

I got them from New World here just before christmas, they were part of the christmas dessert pigout.
They were in the international foods section.

I've bought them from New World, but with a different name, trouble is, I can't remember it. (Blame old age)
In our Supermarket they are with other imported goods from various nations. They were in a rectangular box with a clear top. They are quite crisp, totally different from sponge, in fact I'd say they are the texture of the rusks I used to give my kids.
As a substitute I think you could use those shortbread biscuits that are long and narrow, and quite thick.

Incidentally, are you all aware that raw eggs are not good for pregnant women or elderly people, and there are lots of raw eggs in tiramisu

Yes more like rusks in fact in europe they also come in small round shaoe and cocoa version.mostly given to babies.or to dunk in hot drinks for kids.
There is a fake tiramissu recipe without eggs.for preggie ladies.i am one and i cant get enough of it.

Our local countdown that used to stock Unibic are now stocking Vittoria - Savoiardi biscuits. Sorry I can't be of anymore help.

I bought some before Christmas at Pak & Save and they were in front of the Deli Kitchen.

They are my daughter's very favourite biscuits and I think that's partly because my mum used to give them to her as a baby/toddler - not good dunked in juice (yuck - what is!) but delicious dunked in hot chocolate and the perfect size to hold in a chubby baby fist!

They are very easy to make.
3 eggs, 90gms of sugar, 100gms of flour
cream yolks with sugar.add flour.make stiff snow from egg whites.combibe.pipe on tray lined with paper(even from a plastic bag with corner snipped off) sprinkle with sugar wait till it dinks in place in preheated oven.moderate.bake few minutes

theyre usually in pak n save where the ham/luncheon/cold slices are in the shelves under neath where the sushi and other foriegn types of goodies are.

Made a Tiramisu for Christmas and just used a bought sponge. Didn't cut into fingers, just brushed over the liquid and it turned out delicious. Cut the sponge into about 3 layers. Make in usual way.

Seriously they can be made in 15minutes incl crackibg the eggs.and will cost you fraction.

Have to apologise, I looked today in New World, none there, maybe they didn't sell enough, so discontinued them. Oh well, in future I'll sort out some shortbread, or even make my own.
