Fruit Sponge (Edmonds) 1/2 fil pie dish with either stewed,sweetened fruit & keep hot. Sponge topping: 125gr butter 125gr sugar 1 egg 125gr flour 2tsps b/powder Cream butter & sugar, add egg & beat well. Add sifted flour & b/powder & pour over hot fruit. Bake approx 3/4 hr @ 190. Sprinkle with icing sugar

Yup. Tried and true recipe that. Can't beat it. Great served with custard on a cold winter's night after soup and hot buttered toast. Mmmmm.

yep that's a never fail one! sounds yummy, have inspired me to get busy. It's a great way to make a jar of fruit or a bunch or rhubarb go a long way.
